When making meat and vegetable kabobs the food often spins around on the skewer so that you can't turn it over to cook the other side. Solve the problem by using two skewers instead of one to hold the ingredients. It takes a few more minutes of prep time, but is well worth it once you go to turn the kebabs over. Bamboo skewers are a very inexpensive solution. Remember to soak your skewers in water for about 20 or 30 minutes before piercing the ingredients; it keeps them from burning up on the grill.
Heat grill to medium-high heat. Toss meat with 2 tablespoons steak sauce; let stand 10 minutes. Meanwhile, combine remaining steak sauce, barbecue sauce and mustard. Thread meat onto 8 skewers. If using bamboo skewers, soak in water 20-30 minutes before using. Grill 6 minutes or until meat is done, turning after 3 minutes and brushing occasionally with barbecue sauce mixture. Serve with hot cooked rice, a tossed green salad, and garlic bread.
Tomato Zucchini Casserole
1 cup (4 ounces) shredded cheddar cheese In a bowl, combine the first seven ingredients; set aside. In a large skillet, saute zucchini in 1 tablespoon of butter until crisp-tender, about 5 minutes; drain. Arrange the zucchini in a greased 8-in. square baking dish; sprinkle with half of the cheese mixture. Top with tomatoes and remaining cheese mixture. In a saucepan, saute onion in remaining butter until tender; add bread crumbs and toss to combine. Sprinkle over top. Bake, uncovered, at 375 degrees F for 20-25 minutes or until vegetables are tender. Yield: 6 servings. For hungry appetites double the ingredients and bake in 9 x 13 inch baking dish.
Summer Ice Cream Cake Line an 8-in. square baking dish with foil and grease the foil; set aside. In a large bowl, combine the sugar, butter, yogurt, egg, orange peel and vanilla until blended. Combine flour and cocoa; stir into sugar mixture. Add chocolate chips. Spread into prepared dish. Bake at 325 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs. Cool on a wire rack. Spread ice cream over cake. Cover and freeze for 3 hours or until firm. Remove from the freezer 10 minutes before serving. In a microwave-safe bowl, melt chocolate and shortening; stir until smooth. Using foil, lift dessert out of dish; gently peel off foil. Cut into squares. Garnish with berries and drizzle with chocolate. Yield: 9 servings.
