How to Zest
Zest is the colorful, outermost rind of citrus fruits. It contains strong perfumes and a tangy flavor, and is therefore a common ingredient in both savory and sweet dishes. It also makes an elegant garnish.
You can remove the zest of a citrus fruit using a knife, a vegetable peeler, a grater, or a special tool called a zester. Each of these tools creates a different size zest, which can be used for different purposes. A zester is a handheld utensil with tiny holes that creates small strips of the flavorful zest. To use a zester, place it on the rind and firmly pull toward you. A grater can create finer particles of zest, and a peeler can create wider strips. The new Microplane zesters shave the fruit. The tool you use will depend on your recipe and what you have on hand in your kitchen.
A few things to keep in mind when zesting citrus fruit:
- Avoid stripping off the white inner membrane (pith). The pith is bitter and will not make a good addition to a recipe.
- Always remember to zest fruit before juicing it. It will be almost impossible to zest afterward.
- To get the best zest, buy fruit that is firm and brightly colored, with no soft spots. Bumpy fruit will yield the most zest.
- Wash the fruit before zesting to remove dirt, pesticides, and wax residue.
- Use zest immediately for best flavor.
- Add lemon, lime, or orange zest to muffins, cookies, cakes, pies and frostings.
- Add zest strips as a garnish to desserts, salads, and main dishes.

The Secret to a Flatter Belly
Imagine if your belly always looked as good as it does when you turn sideways in the mirror and suck it in. Ab exercises can help, but 5 or even 50 minutes of crunches won't do any good if you're letting it all hang out for the remaining hours of the day.
One of the abdominal muscles' biggest jobs is to hold our bodies upright, and research shows that poor posture puts these muscles to sleep, leaving Americans in a constant belly-bulging slump. It's a particularly pesky problem for women who've had children. Stretched ab muscles and carrying kids can make it difficult to stand up straight for years after delivery.
Correcting poor posture can make you look 5 pounds slimmer instantly. To keep that trim profile 24-7, you need to retrain and strengthen those belly-slimming, stand-tall muscles. When sitting or standing keep back straight, head up, and tummy in.

RECIPES
Orange Crockpot Chicken
6-ounce can frozen orange juice concentrate, thawed
2 tablespoons orange zest
1/2 teaspoon Watkins Thyme
Dash Watkins Ground Nutmeg
Dash Watkins Garlic Powder
6 boneless, skinless chicken breast halves
1/4 cup water
2 tablespoons cornstarch
Combine thawed orange juice concentrate (not regular orange juice) in bowl along with the orange zest, thyme, nutmeg, and garlic powder. Dip each piece of chicken into the orange juice to coat completely. Place in Crockpot. Pour the remaining orange juice mixture over the chicken. Cover and cook on low for 6-7 hours or on high for about 4 hours.
When chicken is done, remove and keep warm. Pour the sauce that remains in your Crockpot into a saucepan. Mix the cornstarch and 1/4 cup water well (no lumps) and stir into the juice in pan. Cook over medium heat, stirring constantly, until thick and bubbly. Serve the sauce over the chicken.
Serve with rice
Steak and Onion Sandwich
2 to 3 pounds cube steak (tenderized round steak that's been extra tenderized)
1 large onion
1 clove garlic, minced
4-6 French rolls
Butter
Watkins Seasoning Salt
1/2 cup Worcestershire Sauce
Place 1/4 stick butter in skillet and melt. Slice onion and cook with minced garlic in skillet until soft and light brown. Remove and set aside.
Season cube steak with sesasoning salt. Then slice against the grain into strips.
Heat 2 tablespoons butter over high heat in skillet until melted and beginning to brown. add meat in single layer. Cook one side until brown, then flip and cook until brown, about a minute on both sides.
Add 1/2 cup Worcestershire sauce and cooked onions. Stir to combine. Simmer for 10 to 15 minutes.
Slice and butter French rolls and toast in skillet or under broiler.
To serve, lay bottom half of French roll on plate. Place meat mixture, followed by a spoonful of joice from pan. Top with other half of roll, cut in half and devour.
Note: I made these sandwiches and they were delicious. The flavors of all the ingredients blend with none predominating so don't leave out any of the ingredients. The seasoning salt, butter, and Worcestershire sauce all add a salty taste so do not add salt. The cube steak was a bit stringy so simmer to tenderize. You could also use round steak or sirloin steak, cut into cubes, and tenderize with a meat mallet yourself. Then slice into thin strips. For variety you could add sliced fresh mushrooms and your favorite herbs. Top with some mozzarella cheese and melt under broiler.
Tortilla Club
4 (8-inch) fat free flour tortillas, warmed
1/4 cup Thousand Island salad dressing
1/4 cup finely chopped Roma tomatoes
4 lettuce leaves
4 slices deli turkey breast
4 slices Swiss Cheese
4 slices deli honey ham
4 slices Cheddar Cheese or American Cheese
Spread each tortilla evenly with 1 tablespoon salad dressing; sprinkle with 1 tablespoon tomato. Top with 1 lettuce leaf, 1 slice turkey, 1 slice Swiss cheese,1 slice ham and 1 slice Cheddar cheese. Roll up tortilla; secure with toothpicks.
Parmesan Chicken
1/2 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1 tsp Watkins Oregano
1 tsp Watkins Parsley
1/4 tsp Watkins Paprika
1/4 tsp salt
1/4 tsp Watkins Black Pepper
6 boneless, skinless chicken breast halves
1/4 cup butter or margarine, melted.
In a large bowl, combine the first seven ingredients. Dip chicken in butter and then into crumb mixture. Place in a greased 15" x 10" x 1" baking pan. Bake, uncovered at 400 degrees for 20-25 minutes or until chicken is tender and juices run clear. Yield 6 servings.
Caribbean Chicken Salad
2 cups Cooked chicken or turkey
3 cups Cooked rice, cooled
1 cup Celery, finely sliced
1/4 cup Green pepper, chopped
8 ounces Pineapple, crushed
2 tablespoons Pimiento, sliced
1/2 cup Yogurt, nonfat
1/4 cup Mayonnaise
1 1/2 tablespoons Lemon juice
1 teaspoon Watkins Curry Powder
1/2 teaspoon Salt
1/4 teaspoon Watkins Black Pepper
Combine chicken, rice, celery, green pepper, pineapple and pimiento.
In small bowl or jar, blend remaining ingredients. Stir vigorously or shake to blend. Pour over chicken mixture. Toss lightly until well mixed. Chill.
