HEALTH TIP

ICE – IN CASE OF EMERGENCY

Paramedics will turn to a victim's cell phone for clues to that person's identity. You can make their job much easier with a simple idea that they are trying to get everyone to adopt: ICE.

ICE stands for In Case of Emergency. If you add an entry in the contacts list in your cell phone under ICE, with the name and phone number of the person that the emergency services should call on your behalf, you can save them a lot of time and have your loved ones contacted quickly. It only takes a few moments of your time to do.

Paramedics know what ICE means and they look for it immediately. ICE your cell phone NOW!

COOKING TIP

Bake several recipes of your family's favorite cookies; then freeze part of the cookies. They will stay fresh in freezer for 2 to 3 months.

  • When making school lunches just take cookies from freezer, place in sandwich bag, and add to lunch box. The frozen cookies help keep lunch cool and are thawed and ready to eat when lunch rolls around.

  • When suprise guests drop in for a visit remove a few cookies from the freezer and defrost in your microwave. They taste and smell like fresh baked and your house has that wonderful bakery aroma.

RECIPES

Fresh fruits and vegetables are at their peak this time of year. Eating them fresh picked from the garden provides vitamins and minerals for a healthy body. The following recipes use fresh fruits and vegetables as ingredients.

Zucchini Bars
Here's another baking classic that belongs in everyone's recipe box. A clove-scented homemade frosting makes a good thing even better!

2/3 cup packed brown sugar
1/4 cup butter or margarine, softened
1/2 teaspoon Watkins Vanilla
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon Watkins Ground Cinnamon
1/2 teaspoon Watkins Ground Cloves
1 cup shredded zucchini, drained
1/2 cup chopped nuts
Spice Frosting (See Below)

  1. Heat oven to 350ºF. Grease bottom and sides of square pan, 9x9x2 or 8x8x2 inches.
  2. Mix brown sugar, butter, vanilla and egg in large bowl. Stir in flour, baking soda, cinnamon and cloves. Stir in zucchini and nuts. Spread in pan.
  3. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Frost with Spice Frosting. For 24 bars, cut into 6 rows by 4 rows.

Spice Frosting

3/4 cup powdered sugar
1 tablespoon butter or margarine, softened
1/8 teaspoon Watkins Ground Cloves
3 to 4 teaspoons milk

Mix all ingredients until smooth and spreadable.

1 Serving: Calories 95 (Calories from Fat 35 ); Total Fat 4 g (Saturated Fat 2 g); Cholesterol 15 mg; Sodium 75 mg; Total Carbohydrate 14 g (Dietary Fiber 0g); Protein 1 g % Daily Value: Vitamin A 2 %; Vitamin C 0%; Calcium 0%; Iron 2 % Exchanges: 1/2 Starch; 1 Vegetable; 1 Fat

Zucchini Chocolate Cake
The zucchini keeps it moist and doesn't taste like a vegetable.

1/2 cup margarine
1 cup brown sugar
1/2 Cup white sugar
3 eggs
2 1/2 cups flour
1 tsp Watkins Vanilla
1/2 cup yogurt
1/2 cup Watkins Cocoa
2 tsps baking soda
1 tsp Watkins Cinnamon
1/2 tsp salt
3 cups (350g - 11ozs) grated zucchini, drain on paper towel to remove excess moisture
1 cup small pieces of chocolate

Grease and flour 9 x 13 inch pan.

Beat the margarine with the sugars until light and creamy. Add the eggs one at a time, with a teaspoonful of the measured flour to prevent the mixture curdling. Add the vanilla and yogurt and mix well.

Sift the dry ingredients together. Stir in with the grated zucchini. Turn into the prepared pan. Sprinkle surface with the small pieces of chocolate.

Bake at 180C (350F) for 45 - 60 minutes, or until center feels firm and a tooth pick comes out clean.

Peach Streusel Cobbler
When you don't have time to mix up a pie crust this quick streusel-topped dessert will delight your family or guests!

6 to 8 peaches, peeled and sliced
1/2 cup to 3/4 cup sugar depending on ripeness and flavor of peaches
2 tablespoons all-purpose flour
1 teaspoon Watkins Cinnamon
1/2 teaspoon Watkins Vanilla or Almond Extract

  1. Mix sugar, flour, and cinnamon and gently stir into sliced peaches. Add flavoring.
  2. Pour peaches into 9 inch pie plate or 9 x 13 inch baking dish.

Streusel Topping

1/2 cup butter or margarine
1/2 cup brown sugar or granulated sugar
1/2 cup flour
1/2 cup old-fashioned oats
1 teaspoon Watkins Cinnamon

Mix sugar, flour, oats, and cinnamon. Blend in butter or margarine until crumbly with pastry cutter or fork. Sprinkle over peaches. Bake in preheated 400 degree F oven for 40 minutes until bubbly and streusel top is browned.

Serve warm with a scoop of vanilla ice cream.

Old Fashioned Cole Slaw

1/2 c. mayonnaise
2 tbsp. lemon juice
1 tbsp. water
3/4 tsp. salt
1/2 tsp. sugar
1/4 tsp. Watkins Paprika
1/2 sm. head cabbage, finely chopped
1/4 c. chopped celery
1/4 c. chopped green pepper
1/4 c. grated carrots
2 green onions,thinly sliced

In a large bowl, combine mayonnaise, lemon juice, water, salt, sugar and paprika. Add cabbage and remaining ingredients; toss well. Refrigerate to blend flavors.

Creamy Cole Slaw (Diabetic Recipe)

1-1/2 cups low fat mayonnaise
3 tablespoons onion, chopped fine
1 tablespoon white vinegar
3/4 teaspoon salt
8 cups chopped or thinly sliced cabbage
1/3 cup Splenda sweetener
2 teaspoons lemon juice
1/4 teaspoon Watkins Celery Seed
1/4 teaspoon Watkins Black Pepper
1/2 cup carrots, grated

In a large bowl whisk all of the ingredients except for the cole slaw mix and carrots.
Add the slaw mix and the carrots, coating all of the ingredients well. Refrigerate for
at least 2 hours. Mix and serve cold. Serves 8.

Nutrition Information: (per serving)
70 calories, 1 g protein, 13 g carbohydrates,2.5 g fat, 0 mg cholesterol, 480 mg sodium

Sweet and Sour Refrigerator Pickles

Syrup
2 cups/500 mL sugar
2 cups/500 mL white vinegar

4 to 6 cucumbers
2 medium onions, thinly sliced
1 medium green pepper, thinly sliced
1/4 cup/60 mL pickling salt or kosher salt
1 tbsp/15 mL Watkins Pickling Spice (Limited Time)
1-1/2 tsp/7.5 mL Watkins Celery Seed
1-1/2 tsp/7.5 mL Watkins Garlic Flakes

Combine syrup ingredients; let stand for 2 hours or until sugar is dissolved. Warming syrup slightly will dissolve sugar.

Wash cucumbers with Watkins Fresh Wash and thinly slice. Place with remaining ingredients in a large bowl; mix well and let stand for 2 hours. Drain carefully, retaining as much of the spice blend as possible. Pack loosely into sterilized glass jars. Pour syrup over top. Turn jars over occasionally to mix spices. Ready to eat in 3 days. Keep refrigerated. Makes 4 pints.

Vegetable Stuffed Potatoes

4 medium baking potatoes
2 tbsp/30 mL Watkins Garlic and Parsley Grapeseed Oil
1 medium zucchini, cut into 1/2-inch/1-cm pieces
1 cup/250 mL fresh sliced mushrooms
1 large red or yellow bell pepper, cut into 1/2-inch/1-cm pieces
1 can (14.5 oz/411 g ) Italian-style stewed tomatoes
2 tsp/10 mL balsamic vinegar
To taste, Watkins Onion and Garlic Pepper
To taste, freshly ground Watkins Sea Salt

Prick potatoes with a fork and bake at 350ºF/180ºC for 50 to 60 minutes or until tender. In medium skillet, heat grapeseed oil and sauté the zucchini, mushrooms, and peppers for 5 to 10 minutes. Add stewed tomatoes, balsamic vinegar, pepper, and salt; heat through. Cut open potatoes and press gently to fluff potato. Spoon over potatoes. Makes 4 servings.

Grilled Chicken Salad

1 tbsp/15 mL Watkins Fajita Seasoning (1 teaspoon Watkins Cumin, 1 teaspoon Watkins Chili Powder, 1 teaspoon Watkins Garlic Granules may be substituted for Fajita Seasoning)
3 tbsp/45 mL lime juice
4 boneless, skinless chicken breast halves
8 cups/2 L torn Bibb lettuce
1 medium red bell pepper, coarsely chopped
1/4 cup/60 mL sliced pitted ripe olives
3/4 cup/180 mL salsa
2 tbsp/30 mL reduced-fat sour cream
2 tsp/10 mL Watkins Cilantro

Heat grill. In medium bowl, combine Fajita Seasoning and lime juice; mix well. Add chicken; turn to coat. Let stand 5 to 10 minutes at room temperature to marinate. When ready to grill, remove chicken from marinade; discard marinade. Grill chicken 10 to 12 minutes or until fork-tender and juices run clear, turning once.

Meanwhile, in large bowl, combine lettuce, bell pepper and olives; toss gently. In small bowl, combine salsa, sour cream and cilantro; mix well. Pour salsa mixture over salad; toss to combine. Divide salad evenly onto 4 plates.

Slice each chicken breast half crosswise into slices; do not separate slices. Fan chicken slices; arrange 1 breast half on lettuce mixture on each plate. Makes 4 servings.

Grilled Vegetable Pasta Salad

4 cups/1 L uncooked radiatore pasta nuggets
2 cups/500 mL chopped tomato
3 tbsp/45 mL red wine vinegar
1 tbsp/15 mL Watkins Italian Seasoning
2 tsp/10 mL Watkins Garlic Liquid Spice
1 tsp/5 mL sugar
1/2 tsp/2.5 mL freshly-ground Watkins Sea Salt
1/4 tsp/1.2 mL (or more if desired) Watkins Onion & Garlic Pepper
1 green bell pepper, quartered and seeded
1 red bell pepper, quartered and seeded
1 medium yellow summer squash, halved lengthwise
1 onion, sliced 1/4-inch/0.6-cm thick
Watkins Cooking Spray
1/4 cup/60 mL crumbled feta cheese

Begin to heat grill. Cook pasta according to package directions. Meanwhile, in large bowl, combine tomatoes, vinegar, Italian seasoning, liquid Spice, sugar, salt and pepper; toss lightly. Spray vegetables lightly with cooking spray and place on grill. Cook 5 to 6 minutes or until vegetables are tender, turning once or twice. Remove from grill and cut into bite-size pieces. Drain pasta and mix into tomato mixture along with grilled vegetables. Serve warm with feta cheese. Makes 6 servings.

Roasted Butternut Squash Soup

2 butternut squash, halved and seeded
1 jumbo yellow onion, peeled and quartered
Watkins Ginger-Garlic Liquid Spice
6 cups/1.5 liters water
1/4 cup/60 mL Watkins Chicken Soup Base
1 Watkins Bay Leaves
1 teaspoon brown sugar
3/4 tsp/4 mL Watkins Soup and Vegetable Seasoning
3/4 tsp/4 mL Watkins Pumpkin Pie Spice
3/4 tsp/4 mL Watkins Fire Pepper
Watkins Black Pepper and freshly-ground Watkins Sea Salt
1 cup/250 mL whipping cream

Preheat oven to 350°F/180°C. Line a baking sheet with aluminum foil. Brush onion and cut sides of squash with liquid spice, set on prepared baking sheet and roast for 45 to 60 minutes or until squash is tender. Remove from oven and set aside until cool enough to handle. Bring water to a boil in saucepan and add soup base to make broth.

Scrape flesh from squash and place in food processor along with the roasted onion. Purée until smooth, adding chicken broth if needed. Transfer puréed mixture to stockpot and stir in broth. Add bay leaf, brown sugar and seasonings; bring to a boil and simmer gently 10 minutes. Remove from heat, remove bay leaf and stir in cream. Serve hot. Makes 8 servings.

Fresh Tomato Salsa
Wonderful fresh taste made with tomatoes straight from the garden.

4 tomatoes, peeled and chopped
1/2 cup chopped onion
1 fresh or pickled jalapena pepper, chopped (If using fresh pepper remove seeds)
1 teaspoon Watkins Garlic Salt
1 teaspoon Watkins Cilantro or fresh cilantro, chopped

Mix all ingredients and chill in refrigerator to blend flavors. Serve with tortilla chips.
