• Before baking an entire batch, bake a test cookie to give a good indication of dough condition. If it spreads too much, the dough may be too soft.

• Try refrigerating the dough until well chilled about 1 to 2 hours. If still too soft stir in 1 to 2 tablespoons of flour.

• Make sure that the butter is not too soft before making the dough. Soften butter slightly for easier mixing by removing from refrigerator and letting stand 30 to 45 minutes at room temperature. To soften butter quickly, cut into chunks and allow to it soften at room temperature about 15 minutes.

• Be sure to cool cookie sheets between batches. A hot cookie sheet can melt the butter before the cookie dough can set.

• There is no need to grease a cookie sheet unless the recipe indicates to do so. Greasing a cookie sheet when the recipe does not call for it can cause the cookies to spread too much and brown too quickly around the edges.

Broccoli Dip in a Bread Bowl
A delicious herb dip.

1 cup fat-free plain yogurt
1 cup fat-free mayonnaise
1 package (10 ounces) frozen chopped broccoli, thawed and squeezed dry
1 jar (2 ounces) diced pimientos, drained
2 tablespoons minced fresh parsley
1 tablespoon chopped green onion
1/2 teaspoon Watkins Dill, Organic in Tin or All-Natural in Jar
1/8 teaspoon Watkins Garlic Powder, Organic in Tin
1 round loaf (1 pound) unsliced French bread

In a large bowl, combine the yogurt and mayonnaise. Stir in broccoli, pimientos, parsley, onion, dill and garlic powder. Cover and refrigerate for 3 hours or overnight.

Cut the top fourth off the loaf of bread; carefully hollow out bottom of leaf, leaving a 1/2-in. shell. Set the shell aside. Cut the top and removed bread into cubes; place on an ungreased baking sheet. Bake at 350 degrees F for 8-10 minutes or until golden brown. Fill bread shell with dip. Serve with toasted bread cubes. Yield: 3 cups, 24 servings.

Barbecue Beef Sandwiches
Slow-cooking makes the meat juicy and tender.

1 beef chuck roast ( 3 1/2 - 4lbs)
1 can tomato sauce (15oz)
2/3 Cup Watkins Barbecue Sauce Concentrate
3 Cups coarsely chopped celery
1 1/2 Cups coarsely chopped onion
2 T. brown sugar
1 tsp Watkins Garlic Powder

Trim fat from meat. Place in a slow cooker, cutting to fit if necessary. Combine remaining ingredients; mix well. Pour over meat. Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 5-6 hours. Shred beef with a fork, mixing well with cooking juices. Serve on buns or rolls. Makes 12 servings.

Jalapeno Grilled Chicken Drummies

2 1/2 lbs. chicken drummies (meaty portion of wing)
Watkins Chicken Seasoning
1/2 Cup melted butter
2 T. Watkins Jalapeno Hot Sauce
1 1/2 tsp fresh lime juice

Sprinkle generously with Chicken Seasoning. Place on grill or broil until done. Meanwhile, combine butter, Jalapeno Hot Sauce, and lime juice. During last 10 minutes of cooking time, baste with 1/4 of the butter mixture. Remove from grill and place in bowl, toss with remaining butter mixture. Serve hot. Makes about 6 servings.

Zucchini Chip Cupcakes
These moist, nut-topped cupcakes don't even need frosting and they're a great way to use up zucchini.

1/2 cup butter, softened
1/2 cup vegetable oil
1-3/4 cups sugar
2 eggs
1/2 cup milk
1 teaspoon Watkins Vanilla Extract
2-1/2 cups Watkins Baking Cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon Watkins Cinnamon
2 cups shredded zucchini
1/4 cup miniature semisweet chocolate chips
1/4 cup chopped pecans

In a large mixing bowl, cream the butter, oil and sugar until light and fluffy. Beat in the eggs, milk and vanilla. Combine the flour, cocoa, baking soda, salt and cinnamon; gradually add to creamed mixture. Fold in zucchini and chocolate chips.

Fill greased or paper-lined muffin cups two-thirds full. Top with pecans. Bake at 375° for 20-25 minutes or until a toothpick inserted in muffin comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield 2 dozen.

Double Chip Pecan Cookies
Chocolate and butterscotch chips make this a double winner!

1 cup butter, softened
3/4 cup firmly packed brown sugar
3/4 cup sugar
2 eggs
1 teaspoon Watkins Vanilla
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butterscotch-flavored chips
1/2 cup chopped pecans
1 (12-ounce) package (2 cups) real semi-sweet chocolate chips

Heat oven to 375 degrees F. Combine butter, brown sugar, sugar, eggs and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour, baking soda and salt. Beat until well mixed. Stir in butterscotch chips, pecans and chocolate chips by hand.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto lightly greased cookie sheets. Bake for 9 to 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets. Makes 4 1/2 dozen.

Caramel Corn

2 cups brown sugar
2 sticks butter or margarine
1/2 cup corn syrup (white karo)
1 tsp salt

Boil 5 minutes.

Add 1 tsp Watkins Caramel Extract and 1 tsp baking soda.

Stir briskly. Pour over 6 quarts popped corn. Mix thoroughly. Bake for one (1) hour at 200 degrees F stirring at 15 minute intervals.

We had a second hatching this year from the nest by our front door. When the first two young Mourning Doves fledged the nest another adult Mourning Dove took over the nest and much to my surprize a new baby bird peeked out of the nest last week! There was only one baby bird from this hatching. It's truly amazing that the baby bird lives and grows through the hot summer weather with ony food provided by the parent bird.
