Are your kids looking for something to do? Help them make taffy using Watkins extracts!

Taffy

2 cups sugar
1 cup light Karo syrup or other corn syrup
1 1/2 cups water
1 1/2 teaspoon salt
2 teaspoons Watkins Extract (any flavor)

Mix together sugar, syrup, water, and salt; boil until 250 degrees F on a candy thermometer. Add 2 teaspoons extract and food coloring if desired. Pour into a buttered pan and cool slightly. Butter your hands and pull until the candy is difficult to pull. Then cut into pieces.

Keeping Your Body Hydrated

Up to 70 percent of the human body is water, with variations dependent on gender and muscle mass (muscles are 60 to 75 percent water, while fat is 50 percent water). Among other things, water lubricates and protects joints, cools the body, and serves as the primary component of blood. Sedentary people need to drink 6 to 8 glasses of water a day to avoid dehydration. Anyone who exercises or works outside in hot weather should drink substantially more since the body can sweat off 54 ounces of water per hour during a workout or strenous work. That's more than many people drink every day.

Serious dehydration can be life threatening. However, warning signs of dehydration aren't always clear. For one thing, sweating ceases as the body begins to conserve water. This can prompt dangerous jumps in body temperature, but because many people associate a lack of sweat with lack of activity, they may not drink enough water or other liquids. Dehydration also increases pulse rate. Because there's less blood in a dehydrated person's body, the heart must pump faster to deliver enough blood-borne oxygen to the cells. People may fail to recognize that they need water and instead blame their pulse rate on poor conditioning. Before exercise or stenuous work drink at least 8 ounces of water; continue drinking small amounts throughout the activity and after.

It is extremely important to care for young children and the elderly, especially during the hot summer months. They must also drink plenty of liquids to keep their bodies hydrated.

10 Tips for Creating Coolers

Coolers are simple concoctions of fresh fruits, so the ingredients must speak for themselves. Quality counts—in this case the freshest, juiciest fruits—to achieve the best flavors, the most intense colors and optimum vitamins.

  1. Use fresh-squeezed juices whenever possible. They are more flavorful than frozen or bottled juices and are less likely to be bitter or to give drinks an off flavor.
  2. Use the ripest, most aromatic fresh fruits for intense flavors, colors and natural sweetness.
  3. Use superfine sugar—a granulated sugar ground extra fine so it dissolves more readily—in these recipes whenever possible. You can purchase superfine sugar, or make your own by blending or processing granulated sugar in your blender or food processor. In a pinch, regular granulated sugar also works.
  4. Buy small green limes or ripe lemons, preferably the sweet Meyer variety.
  5. Use the best ice for the job. For blended drinks, crushed or cracked ice shortens blending time so the drinks aren't too cold. For stirred drinks, use large ice cubes because they melt more slowly than smaller cubes and won't dilute the juice as quickly.
  6. Place ice cubes in an empty glass to chill it while you prepare the drink, then discard the ice before pouring the drink in the glass. Or place empty glasses briefly in the freezer or refrigerator before using them.
  7. For a pretty presentation, salt or sugar the glass rims. Rub the rims with a slice of lime or lemon, then dip the rims into a saucer filled with coarse salt or superfine sugar.

Mango-Banana Smoothie

2 cups cut-up chilled mango, strawberries, and/or papaya
2 medium bananas, cut-up
1 cup orange juice
1/2 cup ice cubes
1 tsp Watkins Vanilla
Dash Watkins Ground Cinnamon
Dash Watkins Ground Nutmeg

In a blender container combine mango, strawberries, and/or papaya; bananas; orange juice; ice cubes; vanilla; cinnamon; and nutmeg. Cover and blend until smooth. Makes 3 servings. Note: If desired, substitute 1 cup milk or one 8-ounce carton vanilla yogurt for the orange juice.

Piña Colada Frozen Dessert Squares

Crust:
1 cup/250 mL all-purpose flour
1/4 cup/60 mL firmly packed brown sugar
1/2 cup/125 mL butter or margarine
3/4 cup/180 mL flaked coconut
1/2 cup/125 mL sliced almonds

Filling:
1/2 cup/125 mL Watkins Coconut Dessert Mix
1/2 cup/125 mL water
1 cup/240 mL milk
1 package (8 oz/227 g) cream cheese, softened
1 cup/240 mL whipping cream
2/3 cup/160 mL milk
1 can (8 oz/227 g) crushed pineapple in unsweetened juice, undrained
1 tsp/5 mL Watkins Rum Extract

Topping:
1 tbsp/15 mL butter or margarine
1/2 cup/125 mL flaked coconut
1/2 cup/125 mL sliced almonds

Crust: Heat oven to 350°F/180°C. In medium bowl, combine flour and brown sugar; mix well. With pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Stir in coconut and almonds. Sprinkle evenly in ungreased 13 x 9-inch/33 x 23-cm pan. Bake for 20 minutes or until golden brown, stirring twice. When browned, remove from oven and press crumbs evenly in bottom of pan. Cool 20 minutes or until completely cooled.

Filling: In small saucepan, combine dessert mix, water and milk. Follow package directions for pudding (milk has been reduced to 1 cup). Cool.

In large bowl, beat cream cheese until smooth. Gradually beat in whipping cream and milk. Add cooled pudding mixture, pineapple and rum extract. Pour over cooled crust; spread evenly. Cover and freeze for at least 6 hours.

Topping: In saucepan, combine butter, coconut and almonds. Stir over medium to high heat until coconut and almonds are nicely browned. Cool and reserve for topping.

Half an hour before serving, remove dessert from freezer to allow for easier slicing. Top with the coconut and almond mixture. Makes 15 servings.

Peanut Bar Dessert

2-1/2 cups/625 mL crushed chocolate sandwich cookies
6 tbsp/90 mL butter or margarine, softened
2 quarts/liters vanilla ice cream or ice milk, slightly softened
2 cups/500 mL powdered sugar
1-1/2 cups/375 mL evaporated milk
2/3 cup/160 mL semi-sweet chocolate chips
1/2 cup/125 butter or margarine
1-1/2 tsp/7.5 mL Original Double-Strength Vanilla (11 oz)
1-1/2 cups/375 mL peanuts

Mix cookie crumbs and 6 tbsp/90 ml butter in medium bowl; pat into 13 × 9-inch/33 × 23-cm baking dish. Chill in freezer until set. Pack ice cream into chocolate crust; return to freezer. Combine the powdered sugar, milk, chocolate chips, and butter in medium saucepan; bring to a boil, stirring constantly, about 8 minutes. Remove from heat and add vanilla; cool. Sprinkle peanuts over ice cream, pour sauce over all. Return to freezer until frozen. Makes 18 servings.

Chocolate Mint Pie

Graham cracker crust (purchased or homemade in a 9-inch/23-cm pie plate)
1 10-oz/285 g package fudge mint cookies, crushed (about 40 cookies or 2 cups/500 mL crushed)
6 tbsp/90 mL hot water
6 oz/170 g reduced-fat (neufchatel) cream cheese
1/3 cup/80 mL sugar
1 tbsp/15 mL milk
1/2 tsp/2.5 mL Watkins Peppermint Extract
1 8-oz/227 g container non-dairy whipped topping
1/2 tsp/2.5 mL Watkins Double-Strength Imitation Clear Vanilla Flavor (11 oz)
6 to 10 drops green food coloring

Mix crushed cookies and hot water; spoon into graham cracker crust and gently spread to cover bottom. Beat cream cheese until smooth; gradually beat in sugar, milk and peppermint extract. Mix white vanilla extract into whipped topping and fold into cream cheese mixture until smooth. Stir in food coloring and spoon into crust, spreading evenly. Refrigerate overnight. Garnish with fresh mint leaves, if desired. Makes 10 servings.

French Silk Pie

1 recipe Baked Pastry Shell (recipe below)
3/4 cup butter
3/4 cup sugar
1 cup semisweet chocolate pieces, melted and cooled
1 teaspoon Watkins Vanilla
3/4 cup refrigerated or frozen egg product, thawed
Whipped cream (optional)
Chocolate curls (optional)

  1. Prepare Baked Pastry Shell.
  2. For filling, in a large bowl beat butter and sugar with an electric mixer on medium speed about 4 minutes or until fluffy. Stir in melted and cooled chocolate and vanilla. Gradually add egg product, beating on high speed and scraping side of bowl constantly until light and fluffy.
  3. Transfer filling to pastry shell. Cover and chill in refrigerator for 5 hours. If desired, garnish with whipped cream and chocolate curls. Makes 10 servings.
  4. Baked Pastry Shell
    Stir together 1-1/4 cups all-purpose flour and 1/4 teaspoon salt. Using a pastry blender, cut in 1/3 cup shortening until pieces are pea-size. Sprinkle 1 tablespoon cold water over part of the mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat moistening dough, using 1 tablespoon cold water at a time, until all the dough is moistened (4 to 5 tablespoons cold water total). Form dough into a ball. On a lightly floured surface, use your hands to slightly flatten dough. Roll dough from center to edge into a circle about 12 inches in diameter. To transfer pastry, wrap it around the rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim pastry to 1/2 inch beyond edge of pie plate. Fold under extra pastry. Crimp edge as desired. Generously prick bottom and side of pastry in pie plate with a fork. Prick all around where bottom and side meet. Line pastry with a double thickness of foil. Bake in a 450 degree F oven for 8 minutes. Remove foil. Bake 5 to 6 minutes more or until golden. Cool on a wire rack. Makes 10 servings.
  5. Make-Ahead Tip: Prepare as above. Cover and chill in refrigerator for up to 24 hours.

Peanut Butter Silk Pie
This peanut butter silk pie has a graham cracker crust, a thin layer of fudge, and a cream cheese - peanut butter filling. Make this special and delicious dessert for any occasion. This recipe uses chocolate fudge cooked to soft ball stage, but you can use your own favorite fudge recipe.

graham cracker crust for 9-inch pie*

Fudge Layer
1 cup granulated sugar
2 ounces bittersweet chocolate
1/3 cup evaporated milk
1 tablespoon corn syrup
1 heaping tablespoon peanut butter

Filling
8 ounces cream cheese
1/2 cup peanut butter
1 cup powdered sugar
1 tsp. Watkins Vanilla
1/4 teaspoon Watkins Peanut Butter Extract
1/2 cup milk
2 cups whipped topping

*Purchase a large graham cracker crust or make your own:
Mix 1 1/4 cups graham cracker crumbs with 1/4 cup sugar and 1/3 cup melted butter or margarine; pat into a 9-inch pie plate and chill for about 30 minutes before filling. If a crispier crust is desired, bake at 375° for about 7 minutes before filling.

In a medium saucepan, cook sugar, chocolate, milk, corn syrup together, stirring occasionally, to the soft ball stage (see below), or about 234° to 240° on a candy thermometer. Remove from heat; stir in peanut butter. Beat lightly for a few minutes; pour into bottom of pie crust. Chill thoroughly before filling.

In a large mixing bowl, beat cream cheese with peanut butter, powdered sugar and milk. Add vanilla and peanut butter extract. Fold in whipped topping until well blended. Spoon into fudge-layered pie crust and garnish with chocolate curls and/or chopped peanuts. Chill thoroughly before serving.

To test for soft ball stage: Use fresh cold water each time you test the candy. Spoon about 1/2 teaspoon of hot candy into 1 cup of cold water. Push the candy with your finger to form a ball. Gently pick the formed ball up (if it will not form a ball, it is not done) - the soft ball will flatten slightly when removed from water.

Strawberry-Banana Cream Pie

1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/3 cup shortening or lard
4 to 5 tablespoons cold water
1/4 cup finely chopped almonds, toasted
1/2 cup sugar
2 tablespoons cornstarch
1-3/4 cups milk
2 beaten egg yolks
1 tablespoon margarine or butter
1/2 teaspoon Watkins Vanilla
2 medium bananas
2 teaspoons lemon juice
2 cups sliced strawberries
1/2 cup whipping cream
1 tablespoon sugar
1/4 teaspoon Watkins Amond Extract

Prepare pastry using flour, salt, shortening, water, and finely chopped almonds. Trim pastry to 1/2 inch beyond edge of plate. Fold under extra dough. Crimp edge, but do not prick. Line the pastry shell with a double thickness of foil. Bake in a 450 degree F. oven 8 minutes. Remove foil. Bake 4 to 5 minutes more or until set and dry. Cool.

For filling, in a saucepan mix the 1/2 cup sugar and cornstarch. Gradually stir in milk. Cook and stir until bubbly. Cook and stir 2 minutes more. Remove from heat. Stir about 1 cup of the hot mixture into the beaten egg yolks. Return all to saucepan. Bring to a gentle boil. Cook and stir 2 minutes more. Remove from heat. Stir in margarine and vanilla. Cover surface with plastic wrap and chill. Slice bananas 1/4-inch-thick; toss with lemon juice. (You should have about 1-1/4 cups). Spread half the filling into pastry shell. Arrange half the bananas and strawberries on top. Top with remaining filling, bananas, and strawberries. Cover; chill 1 to 6 hours.

Before serving, beat the whipping cream, 1 tablespoon sugar, and almond extract until stiff peaks form. Pipe or dollop onto pie. Makes 8 servings.

Vanilla Soda

Per serving:
1 tsp/5 mL Watkins Original Double-Strength Vanilla (11 oz)
1-1/2 tsp/7.5 mL sugar or equivalent artificial sweetener
8 fl. oz. (1 cup/240 mL) club soda
1 scoop vanilla ice cream

Place vanilla and sugar in bottom of each glass being prepared; stir to mix. Pour in club soda, stirring gently to blend. Carefully add a scoop of ice cream to glass; serve with a straw and a long spoon. Makes 1 serving.

Watkins Extracts - chocolate, cherry, strawberry, raspberry, banana, lemon, orange, peach.

Pour cold cream soda into a chilled glass. Add 1/8 teaspoon Watkins extract; stir. Then add a scoop of vanilla ice cream.

Iced Chai Tea

Per Serving
3 1/2 tablespoons Watkins Chai Latte
3/4 (6 fl oz) cup hot water
1/2 cup vanilla-flavored cream soda or orange soda
Cinnamon sticks, if desired

Chill glasses in freezer.
Stir chai latte into hot water. Chill in refrigerator.
Serve over ice. Add 1/4 to 1/2 cup cream soda or orange soda. Garnish with cinnamon stick.

Iced Espresso

1/2 cup ground espresso coffee or Watkins Rock Solid French Roast Coffee
1 teaspoon finely shredded orange peel or 1 teaspoon Watkins Orange Peel
1/4 tsp Watkins Orange Extract
4 cups water
1-1/2 cups skim milk
3 tablespoons sugar
Ice cubes
Orange peel strips
1 teaspoon grated semisweet chocolate

  1. Prepare coffee with shredded orange peel and water in a drip coffee maker or percolator according to manufacturer's directions. Pour coffee into a heatproof pitcher; stir in sugar and milk. Chill at least 3 hours or until serving time.
  2. To serve, fill 6 glasses with ice cubes; pour coffee mixture over ice. Garnish with orange peel strips and grated chocolate, if desired. Makes 6 (6-ounce) servings.

Iced Coffee

Serve it straight on the rocks or stir in some extras for the creamy variations.

3 cups hot strong coffee
2 to 3 tablespoons sugar (optional)
Ice cubes
Orange wedges (optional)

Pour hot coffee into a nonmetal container. Cover; cool to room temperature. (Do not refrigerate as this causes coffee to become cloudy.)

Before serving, stir the desired amount of sugar into cooled coffee. Pour over ice in tall glasses. If desired, garnish with orange wedges.

Iced Cappuccino: Add 1 teaspoon Watkins Vanilla to cooled coffee. Sweeten to taste. Pour over ice in glasses. Pour about 3 tablespoons half-and-half or light cream into each glass. Makes four 6-ounce servings.

Iced Cafe Mocha: Add 1/2 cup half-and-half or light cream and 1/4 cup chocolate-flavored syrup to cooled coffee. Sweeten to taste. Serve over ice. Makes four 7-ounce servings.

Orange-Spiced Coffee

1/4 to 1/3 cup Watkins Rock Solid Coffee
1/2 teaspoon Watkins Ground Cinnamon
1/8 teaspoon Watkins Ground Allspice
1/8 teaspoon Watkins Ground Cloves
2 tablespoons orange liqueur or orange juice
2 tablespoons light cream (optional)
2 tablespoons brown sugar (optional)

Place a coffee filter in coffee filter basket of 10-cup drip electric coffeemaker. Combine coffee, cinnamon, allspice, and cloves in coffee filter.

Prepare coffee according to coffeemaker directions. Stir in orange liqueur or orange juice and, if desired, light cream and/or brown sugar. If desired, garnish each serving with orange wedges. Serve immediately. Makes 8 (6-ounce) servings

Iced coffee: Cool coffee to room temperature, covered, 2 hours. Serve over ice. If desired, stir light cream and/or brown sugar into coffee before serving.

BIRD WATCHING

If you are a birdwatcher you probably keep a journal of bird sitings, especially the first bird you see of a particular species. This journal is called a life list. This past week I had two new sitings!

  1. An immature Brown-headed Cowbird.
  2. A male Hooded Oriole.


Immature Cowbird


Dark-eyed Junco

The female Cowbird lays her eggs in the nests of other birds and then leaves the eggs to be hatched and the baby birds raised by the bird that made the nest. Last week I saw an immature Cowbird near my feeders with its mouth wide open, shaking its feathers. At first I couldn't figure out what was happpening. Then I saw a nearby Dark-eyed Junco place seeds in the mouth of Cowbird. After consulting my birding guide I figured out that the Junco was acting as parent to the Cowbird and feeding it birdseed. These two birds have been at my feeders everyday. Such a site to see! Although the pictures above don't show this, the Junco is about half the size of the Cowbird and as soon as the Cowbird sees the Junco it runs over with its mouth open. It's truly amazing that birds show that kind of recognition.

A male Hooded Oriole was drinking sugar water at my hummingbird feeder. This Oriole has a slender curved bill and eats insects, spiders, nectar, and fruit. It was enjoying a sip of sugar water.
