Welcome to another issue of Around the Kitchen Table!
I'm a little frazzled today! When I woke up this morning the electricity was off and didn't come back on for two hours. We are having our kitchen partially remodeled, new counter tops, flooring, and lighting. A water pipe in the kitchen ceiling didn't hold the weld and started leaking. I don't know where all the dust and grit come from. Everything in the living room and dining room, as well as, the kitchen are covered with a layer of dust. I'm sure our kitchen will look much improved when the work is done, but going without a kitchen for several days is kind of frustrating!

My favorite vegetable is brocolli. I love to steam it, serve it with cheez whiz heated on top of it and also use it in many recipes including my Brocolli/Rice Casserole. Here's my recipe:
1 10 oz bag of frozen or fresh brocolli steamed until done. Set aside.
1 large onion sauteed in margarine until clear. Drain and set aside.
1 can of Mushroom soup do not add water
1 jar cheez whiz
1 can mushrooms drained
3 cups of minute brown rice cooked and drained.
Place all ingredients into a bowl and mix thoroughly. Pour into a casserole with lid. Heat in 375 degree oven until hot and bubbly. Serve immediately.

COOKING TIPS
- Rhubarb (recipes below)
Look for rhubarb stalks that are crisp and brightly colored. Tightly wrap in a plastic bag and store in the refrigerator for up to 3 days. Wash the stalks and remove the eaves before using. One pound of rhubarb yields about 3 cups chopped.

RECIPES
Green Chili Beef Burritos
From Taste of Home
2 boneless beef top sirloin roasts (3 pounds each)
4 cans (4 ounces each) chopped green chilies
1 medium onion, chopped
3 medium jalapeno peppers, seeded and chopped
3 garlic cloves, sliced
3 teaspoons Watkins Chili Powder
1-1/2 teaspoons Watkins Ground Cumin
1 teaspoon Watkins All-Purpose Seasoning (salt free) or Watkins Seasoning Salt
1 cup of beef broth prepared with 1 cup boiling water and 1 1/2 teaspoons Watkins Beef Soup Base
24 fat-free flour tortillas (8 inches), warmed
Chopped tomatoes, shredded lettuce and reduced-fat cheddar cheese
Trim fat from roasts; cut meat into large chunks. Place in a 5-qt. slow cooker. Top with chilies, onion, jalapenos, garlic, chili powder, cumin and seasoning blend if desired. Pour broth over all. Cover and cook on low for 8-9 hours.
Remove beef; cool slightly. Shred with two forks. Cool cooking liquid slightly; skim fat. In a blender, cover and process cooking liquid in small batches until smooth. Return liquid and beef to slow cooker; heat through. Place 1/3 cup beef mixture on each tortilla. Top with tomatoes, lettuce and cheese if desired. Fold in ends and sides. Yield: 2 dozen.
Chicken Alfredo Pasta
2 boneless/skinless chicken breasts
1 1/2 tsp/7.5 mL Watkins Original Grapeseed Oil
1/2 cup/125 mL red pepper, chopped
1/2 cup/125 mL yellow pepper, chopped
1 cup cup/250 mL sliced mushrooms
1/4 cup/60 mL green onion, chopped
1/2 cup/125 mL Kalamata olives
1 lb/140 g pasta noodles
2 tsp/10 mL all-purpose flour
3/4 to 1 tsp/4 to 5 mL Watkins Garlic Liquid Spice
1 can (12 oz/340 g) evaporated skim milk
1/2 cup/125 mL grated Parmesan cheese
1/4 tsp/2.5 mL Watkins Black Pepper
Saute chicken breast in grapeseed oil for 6 to 8 minutes over medium heat. Add red and yellow peppers, mushrooms and green onions. Continue cooking until vegetables are tender. Add Kalamata olives. Meanwhile, cook your favorite pasta according to package directions.
Remove chicken and vegetables from skillet, slice chicken. In pan juices brown flour; stir in garlic liquid spice and evaporated milk. Cook, stirring occasionally until thickened. Stir in Parmesan cheese. Coat cooked noodles with sauce; stir in vegetables and slices of chicken. Sprinkle with pepper.
Apple Pie in a Glass
From Light and Tasty
If you like apple pie, you'll love this milk shake!
1/2 cup fat-free milk
1 cup reduced-fat frozen vanilla yogurt
1/2 cup apple pie filling
1/4 teaspoon Watkins Cinnamon
Place all ingredients in a blender or food processor; cover and process until smooth. Pour into glasses; serve immediately. Yield: 2 servings.
Strawberry Swirls
Adapted from Country Woman
2 cups sugar
2 cups water
1/2 cup butter, melted
1/2 cup shortening
1-1/2 cups self-rising flour
1/2 cup milk
2 cups finely chopped fresh strawberries, drained
1/4 teaspoon Watkins Strawberry Extract
Whipped cream, optional
In a saucepan, combine sugar and water; cook and stir over medium heat until sugar is dissolved. Remove from the heat; allow to cool. Pour butter into a 13-in. x 9-in. x 2-in. baking dish; set aside.
In a bowl, cut shortening into flour until mixture resembles coarse crumbs. Stir in milk until moistened.
Turn onto a lightly floured surface; knead until smooth, about 8-10 times. Roll into a 12-in. x 8-in. rectangle. Mix strawberry extract with strawberries and sprinkle strawberries on dough. Roll up, jelly-roll style, starting with a long side; seal the seam. Cut into 12 slices. Place with cut side down over butter.
Carefully pour syrup around rolls.
Bake at 350 degrees F for 40-45 minutes or until golden brown and edges are bubbly. Serve warm with whipped cream if desired. Yield: 12 servings.
Streusel Rhubarb Dessert
Quick Cooking
This old-fashioned dessert has a sweet crumb topping and pleasantly tart rhubarb filling.
1 cup all-purpose flour
1/3 cup confectioners' sugar
1/3 cup cold butter
Filling
1-1/4 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon salt
2 eggs, lightly beaten
3 cups chopped fresh or frozen rhubarb
Topping
3/4 cup all-purpose flour
1/2 cup sugar
1/4 teaspoon Watkins Cinnamon
1/3 cup cold butter
In a bowl, combine flour and confectioners' sugar. Cut in butter until crumbly. Press into a greased 9-in. square baking dish. Bake at 350 degrees F for 15-18 minutes or until brown around the edges.
Meanwhile, in a large bowl, combine the sugar, flour and salt. Add eggs; mix well. Fold in the rhubarb. Pour over crust.
For topping, combine the flour, sugar and cinnamon in a small bowl; cut in butter until crumbly. Sprinkle over filling. Bake at 350 degrees for 45-50 minutes or until rhubarb is bubbly. Cool on a wire rack. Yield: 12 servings.
Rhubarb Coffee Cake
Watkins Cooking Spray
2 cups/500 mL all-purpose flour
1 cup/250 mL sugar
4 tsp/20 mL Watkins Baking Powder
1-1/2 tsp/7.5 mL Watkins Purest Ground Cinnamon
1/2 tsp/2.5 mL salt
1 egg
1 cup/250 mL buttermilk
1/4 cup/60 mL Watkins Original Grapeseed Oil
2 tsp/20 mL Watkins Original Double-Strength Vanilla
2 cups/500 mL chopped fresh or frozen rhubarb (thaw and drain if frozen)
2 tbsp/30 mL sugar
1/4 tsp/1.2 mL Watkins Purest Ground Cinnamon
Lightly grease a 9-inch/23-cm round cake pan. In medium bowl, combine flour, sugar, baking powder, cinnamon, and salt.
In a large bowl, whisk egg, buttermilk, oil, and vanilla. Add the flour mixture and stir just to blend. Stir in rhubarb.
Pour batter into the prepared pan, spreading evenly. In small bowl, combine remaining sugar and cinnamon. Sprinkle evenly over cake. Bake at 350 dgrees F/180 degrees C for 45 to 50 minutes or until top is golden brown and cake tests done. Let cake cool in pan on wire rack for 15 minutes. Cut into wedges and serve warm. Makes 10 servings.
Chunky Rhubarb Applesauce
Country Extra
1 pound rhubarb, trimmed and cut into 1/2-inch chunks
2 pounds tart cooking apples, peeled and cut into 1/2-inch chunks
1/2 to 1 cup sugar
1/4 teaspoon Watkins Cinnamon
1/8 teaspoon Watkins Ground Nutmeg
Place rhubarb, apples and sugar to taste in a large saucepan. Cover and simmer until fruit is soft, about 40-45 minutes. Stir in cinnamon and nutmeg. Serve warm or cold. Yield: 4 cups.

BIRD WATCHING
This is a picture of the Cedar Waxwings on our privet tree. Most of the tiny berries have been eaten!
The Cedar Waxwings were back again this year. They arrive for a day or two during February or March to devour the berries from the privet tree in our back yard. There are usually 25 to 50 birds in the flock and they fight with the Robins over the berries!
The Cedar Waxwing is one of the most frugivorous (fruit eating) birds in North America. Many aspects of its life, from its nomadic habits to its late breeding season, may be traced to its dependence upon fruit.
Description
Size: 14-17 cm (6-7 in)
Wingspan: 22-30 cm (9-12 in)
Weight: 32 g (1.13 ounces)
Medium-sized songbird.
Gray-brown overall.
Crest on top of head.
Black mask edged in white.
Yellow tip to tail; may be orange.
Small bill.
Yellow belly.
White under tail.
Black chin patch.
May have red wax droplets on tips of secondaries.
Small legs and feet.
Sexes nearly alike
Summer Range
Breeds from British Columbia across Canada, southward to northern California, northern Arkansas, and northern Georgia.
Winter Range
Winters from very southern Canada southward through United States and Mexico into Central America. Numbers vary in each location from year to year.
Habitat
Breeds in open woodland, old fields with shrubs and small trees, riparian areas, farms, and suburban gardens. Winters in areas with fruit-bearing trees and shrubs, especially open woodlands, parks, gardens, and forest edges.
They eat fleshy fruit and insects. Their nest is a bulky open cup of twigs, grasses, moss, and other materials placed in a fork of a tree branch. They usually lay 4-5 eggs. The eggs are pale blue gray with sparse black spots.
Cool Facts
- The name "waxwing" comes from the waxy red appendages found in variable numbers on the tips of the secondaries of some birds. The exact function of these tips is not known, but they may serve a signaling function in mate selection.
- Cedar Waxwings with orange instead of yellow tail tips began appearing in the northeastern United States and southeastern Canada beginning in the 1960s. The orange color is the result of a red pigment picked up from the berries of an introduced species of honeysuckle. If a waxwing eats the berries while it is growing a tail feather, the tip of the feather will be orange.
- The Cedar Waxwing is one of the few temperate dwelling birds that specializes in eating fruit. It can survive on fruit alone for several months. Unlike many birds that regurgitate seeds from fruit they eat, the Cedar Waxwing defecates fruit seeds.
- The Cedar Waxwing is vulnerable to alcohol intoxication and death after eating fermented fruit.
