I love sparkling clean windows! When I look outside, the greens of spring seem so vivid. On one of the warm days I went out and washed the outside of all my windows. First I sprayed them with a hose and then washed with a solution of Watkins Concentrated Degreaser, Watkins Organic Cleaner, and hot water. I sprayed them with a hose again to remove dirt and soap and used a squeege and paper towel to get them spotless. Watkins Concentrated Degreaser and Watkins Concentrated Organic are on special this month.

LAUGH WITH ME
A young man shopping in a supermarket noticed a little old lady
following him around. If he stopped, she stopped. Furthermore she kept
staring at him. She finally overtook him at the checkout. She turned to
him and said, "I hope I haven't made you feel ill at ease, but it's
just that you look so much like my late son, God bless him!"
The man answered, "That's okay, ma'am."
The old woman wiped a tear from her eye with a hanky. "I know it's silly
of me," she confessed, "but if you'd call out "Good bye, Mom!" as I
leave the store, it would make me feel SO happy."
The woman went through the checkout, and as she was on her way out of
the store, the man called out cheerfully: "Goodbye, Mom!"
The little old lady waved, and smiled back at him. Pleased that he had
brought a little sunshine into someone's day, the young man placed his
handful of groceries on the checkout belt and proceeded to pay his bill.
"That comes to $121.85," said the clerk.
The man was shocked. "How come so much?" he asked, incredulously. "I
only bought 5 items!"
"Yeah," replied the clerk. "But your Mother said you'd be paying for HER
groceries, too."

KITCHEN TIP - Organize Your Refrigerator
A crowded refrigerator is an invitation to spills from things knocked over as you rifle through it before dinner. Start labeling and dating leftovers (with a grease pencil or masking tape and a pen) when you put them away and there will be no more wondering whether the salsa is past its prime. Clear the shelves each week before you head to the market. To keep shelves neat use large bins to corral like items - smoothie fixings, jams and jellies, sandwich condiments, lunch meats, and cheeses.

HEALTH TIP
Breathing Easy Doesn't Have to Be Difficult
Most people breathe about 20,000 times per day - more if they are active or exercise strenuously. Every day is a good day to stop taking your lungs for granted. Help your lungs stay healthy - try the following:
- Avoid irritants
Pollution, bacteria, viruses, molds, chemical and gas fumes, all can aggravate your lungs. Use a high-efficiency particulate air (HEPA) filter at home to filter out irritants, especially if you have pets.
- Eat antioxidant-rich fruits and vegetables
Apples, oranges and tomatoes can nourish the lungs, and the natural mix of carotenes in carrots, yellow squash and dark leafy greens may help protect against lung cancer.
- Exercise
Regular fitness strengthens breathing muscles and improves the respiratory system. If you have lung problems, talk with your physician about a fitness program.
- Do breathing exercises
Try taking slow, deep, regular breaths, and extend each exhalation to squeeze out more air.
- Stop smoking
Avoid secondhand smoke, as well. Both can lead to lung problems and cancer.

RECIPES
Springtime Coffee Cake
Delight with the fresh fruit flavor in this coffee cake. The strawberries and rhubarb make a nice combination.
2 cups unsweetened fresh or frozen strawberries
1-1/2 cups diced fresh or frozen rhubarb
3/4 cup sugar
3 tablespoons cornstarch
3 tablespoons cold water
Cake
1-1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon Watkins Ground Cinnamon
1/2 teaspoon Watkins Ground Nutmeg
1/2 teaspoon salt
1/2 teaspoon Watkins Baking Powder
1/2 teaspoon baking soda
3/4 cup cold butter or margarine
2 eggs
3/4 cup buttermilk
1/2 teaspoon Watkins Almond Extract (on sale this month)
Topping
1/2 cup sugar
1/2 teaspoon Watkins Ground Cinnamon
1 tablespoon cold butter or margarine
1/2 cup chopped walnuts
In a saucepan, combine strawberries, rhubarb and sugar; let stand for 15 minutes. Combine cornstarch and water; stir into the fruit mixture. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes. Cool to room temperature.
Combine flour, sugar, cinnamon, nutmeg, salt, baking powder and baking soda; cut in butter until crumbly. In a small mixing bowl, beat eggs, buttermilk and extract; add to flour mixture and mix well. Spread half of the batter into a greased 9-in. square baking pan. Carefully spoon the fruit mixture on top. Spoon remaining batter over fruit mixture.
For topping, combine sugar and cinnamon; cut in butter until crumbly. Stir in walnuts. Sprinkle over batter. Bake at 350 degrees F for 40-45 minutes or until a wooden pick inserted near the center comes out clean. Yield: 9-12 servings.
Spring Pea Salad
Celery, cauliflower, bacon and sunflower seeds add crunch to this refreshing spring blend.
1 package (10 ounces) frozen peas, thawed
2 celery ribs, thinly sliced
1 cup small cauliflowerets
3 green onions, thinly sliced
1/2 cup ranch salad dressing
1/4 cup sour cream
1/4 teaspoon Watkins Garlic Powder
4 bacon strips, cooked and crumbled
1/4 cup sunflower kernels
In a large bowl, combine peas, celery, cauliflower and onions. Combine dressing and sour cream; pour over salad and mix well. Cover and refrigerate for 1 hour. Just before serving, stir in bacon and sunflower kernels. Yield: 6-8 servings.
Creamy Asparagus Casserole
2 pounds fresh asparagus, cut into 1-inch pieces
1/4 cup butter or margarine
1/4 cup all-purpose flour
2 cups milk or half-and-half cream
1/2 teaspoon salt
1/4 teaspoon Watkins Granulated Black Pepper (on sale this month)
6 hard-cooked eggs, sliced
1 cup (4 ounces) shredded cheddar cheese
1 cup crushed potato chips
Place the asparagus in a large saucepan with enough water to cover; cook until crisp-tender. Drain well; set aside.
In a saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes. Add salt and pepper. Layer half of the asparagus in a ungreased 11-in. x 7-in. x 2-in. baking dish. Cover with half of the eggs, cheese and sauce. Repeat layers. Sprinkle with potato chips. Bake, uncovered, at 350 degrees F for 30 minutes or until heated through. Yield: 6-8 servings.
Chicken Taco Filling
Use this flavorful meat in soft tacos, hard tacos, nachos, burritos, salads, or almost
anywhere.
4 tablespoons Watkins Mexican Soup and Seasoning Base
1 1/2 teaspoons Watkins Chicken Soup and Gravy Base
1 cup boiling water
1 pound boneless skinless chicken breasts
Dissolve Mexican Soup and Seasoning and Chicken Soup Base in boiling water. Place chicken breasts in crockpot and pour broth over. Cover and cook on low for 6-8 hours. With two forks, shred
the chicken meat into bite-sized pieces.
Slow Cooker Hawaiian Beef
Tender beef and crunchy green peppers mingle in a sweet and sour pineapple sauce in this slow cooker recipe.
1/3 cup firmly packed brown sugar
1/3 cup cider vinegar
1 (8-ounce) can pineapple chunks, drained, reserve juice
3 tablespoons Watkins Spicy Garlic Soy Sauce
1/4 teaspoon Watkins Garlic Powder
2 tablespoons butter
1 1/2 pounds round steak, cut into 1 1/2-inch pieces, trimmed
1 cup baby-cut carrots, halved crosswise
1 large (1 cup) onion, cut into 1-inch pieces
3 tablespoons cornstarch
3 tablespoons cold water
1 large (2 cups) green bell pepper, cut into bite-sized pieces
Hot cooked rice
Green onion slices
Combine brown sugar, vinegar, reserved pineapple juice, soy sauce and garlic powder in small bowl; stir until sugar is dissolved. Set aside.
Melt 1 tablespoon butter in 12-inch skillet until sizzling; add half of steak pieces. Cook over medium-high heat, stirring occasionally, until browned (4 to 5 minutes). Place steak pieces in slow cooker. Repeat with remaining butter and steak pieces.
Add carrots and onion to slow cooker. Pour pineapple juice mixture over vegetables. Cover; cook on Low heat setting for 7 to 9 hours, or on High heat setting for 3 to 4 hours or until meat is tender.
Increase heat setting to High. Dissolve cornstarch in cold water in small bowl. Stir cornstarch mixture, pineapple chunks and green pepper into beef mixture. Cover; continue cooking 30 minutes or until green pepper is crisply tender and juices are thickened. Serve over hot cooked rice and garnish with green onions, if desired. Serves six (1 1/3 cup servings).
Recipe Tip
Tougher, less expensive cuts of meat are perfect to use in the slow cooker. The slow cooking process breaks down tough connective tissue, making the meat tender. The tougher cuts are more flavorful than the more tender pieces, especially if browned first before adding to other ingredients. And the long cooking time brings out the full flavor of the less expensive cuts.
Creamy Salmon Rigatoni
This casserole is a great way to use leftover salmon.
1/2 cup dried bread crumbs
3 tablespoons butter, melted
6 ounces (2 1/4 cups) uncooked dried rigatoni pasta
8 ounces cooked salmon, flaked into bite-sized pieces
1 (6 1/2-ounce) jar marinated artichoke hearts, drained, coarsely chopped
1 (16-ounce) jar prepared Alfredo sauce
1 teaspoon Watkins Dill
Heat oven to 350 degrees F. Combine bread crumbs and butter in small bowl; set aside.
Cook rigatoni according to package directions; drain. Place cooked rigatoni into ungreased 1 1/2-quart baking dish. Add all remaining ingredients; stir to combine. Sprinkle with bread crumb mixture.
Bake for 18 to 23 minutes or until heated through and bread crumbs are golden. Serves four.
Substitute 1 (7 1/2-ounce) can salmon, drained, flaked.
Recipe Tip
To cook fresh salmon, heat oven to 400 degrees F. Place 8-ounce salmon fillet in small baking dish. Sprinkle with 1 tablespoon lemon juice and 1/2 teaspoon dried dill weed. Bake for 15 to 17 minutes or until salmon flakes easily with fork. Remove from oven; cool slightly before breaking into pieces.

Touch of Spring Muffins
Strawberries and rhubarb are a winning combination, and their sweet-tart pairing makes these lovely muffins delightful as part of a meal or as a snack.
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon Watkins Baking Powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1 teaspoon Watkins Vanilla
1/3 cup vegetable oil
1/2 cup sliced fresh strawberries
1/2 cup sliced fresh rhubarb
Topping
6 small fresh strawberries, halved
2 teaspoons sugar
In a large bowl, combine flour, sugar, baking powder and salt. In another bowl, beat egg, milk vanilla, and oil until smooth. Stir into dry ingredients just until moistened. Fold in strawberries and rhubarb.
Fill greased or paper-lined muffin cups three-fourths full. Place a strawberry half, cut side down, on each. Sprinkle with sugar. Bake at 375 degrees F for 22-25 minutes or until muffins test done. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.
Chocolate Cream Macaroon Tarts
This simple macaroon tart recipe is filled with a rich chocolate buttercream filling.
Crust Ingredients
1 1/2 cups sweetened flaked coconut
1/4 cup sugar
2 egg whites
Filling Ingredients
1/4 cup butter, softened
1 2/3 cups powdered sugar
2 tablespoons heavy whipping cream
1/4 teaspoon Watkins Almond Extract (on sale this month)
1 tablespoon light corn syrup
2 (1-ounce) squares unsweetened baking chocolate, melted, cooled
1/4 cup sliced almonds, toasted
Heat oven to 350 degrees F. Combine coconut, sugar and egg whites in large bowl; mix well.
Spray sixteen mini muffin pan cups with no-stick cooking spray. Press 1 tablespoon coconut mixture on bottom and up sides of each cup. Place muffin pans onto baking sheet.
Bake for 13 to 16 minutes or until tarts begin to brown. Cool slightly (5 minutes). Remove from pans. Cool completely.
Meanwhile, beat butter in small bowl at medium speed until creamy. Continue beating, gradually adding powdered sugar alternately with whipping cream and almond extract and scraping bowl often, until light and fluffy. Add corn syrup; mix well. Stir in melted chocolate.
Place filling in pastry bag fitted with star tip. Pipe filling evenly into coconut crusts. Garnish with almonds.

BIRD WATCHING
Springtime is nesting time for many birds. Early morning choruses grow louder as birds repeatedly sing songs to attract mates and defend their territory.
After birds pair up, they'll build nests, lay eggs and raise their young. Some birds will go on to repeat this cycle.

When you place a nesting box in your backyard, you're inviting birds to raise their families in front of yours. You'll see birds courting mates, building nests, laying eggs, feeding young. And when it's time
for the fledglings to leave the nest, they'll likely learn to feed at your feeders and bathe at your birdbaths!
Birds build open-cup shaped nests in trees or on the ground, or they nest in natural cavities (or holes) in trees. The birds that choose natural cavities are called cavity-nesting birds, and these birds will readily use a nest box if it is in the right habitat. Birds you can attract with a nest box (designed for the specific species) include: bluebirds, wrens, chickadees, titmice, nuthatches, woodpeckers, Purple Martins, swallows, owls and Wood Ducks.

Selecting a good nest box
The nest box should have the right size hole, and the distance from the entry hole to the floor as well as the inside dimensions must suit the bird you are trying to attract. You can build your own nesting boxes or purchase them at a birding store. Just make sure your boxes meet the required specifications for the species of birds you'd like to attract to your yard.
The wood should be at least 3/4 of an inch thick to provide insulation.
The box does not need additional paints or stains. Dark colors can absorb sunlight and make the box too warm, depending on where it is placed.
You should be able to open a panel to monitor nesting activity and clean the box after its use.
The roof should be slanted so water can run off easily, and the box should include ventilation holes to help the interior stay cool.
The inside of the box should have recessed grooves or rough surfaces under the entrance hole to help baby birds climb out. Outside perches are not necessary.
Choosing the right habitat
Determine the proper height to hang or mount your nest box. Many birds prefer their nesting habitat at a certain level, and you will be more likely to attract the species you seek
if you place the box at the right height. Find out where your specific bird likes to nest. Does the bird prefer woodlands or open spaces? Does it like to be near water? Place your box in your yard before birds start seeking nesting spots in February and March. You can leave the box up all year, but clean it out in fall so birds can use it as shelter in the winter.
Choose Functional Bird Houses
It is important that functional houses meet the criteria of the proper housing situation for birds. It is important that houses have the following characteristics:
- good ventilation
- panel for easy cleanout/removal of pests
- adequate drainage
- roof overhang providing shade and protection from driving rain
- no perches
Ventilation
It is important for functional houses to have good ventilation. Panels of wood that are ¾ inches thick help provide insulation from the heat. Holes near the top of the house allow for the heat to escape.
Clean out
A side panel that opens allows for easy clean out of the nest at the end of the season which helps to keep the pest population down. (The Wild Birds Unlimited houses allow for viewing or photographing of the birds without disturbing them by offering a top opening panel.)
Drainage
Holes at the bottom corners allow for drainage. Drainage holes in the middle of the bottom will not adequately allow for drainage.
Perches
Perches are not necessary and actually allow sparrows and other birds a place to sit and access the hole.
Fledgling ladder
It is a good idea (especially for bluebird houses) to provide either slashes or a ladder to help the fledglings leave the house.
Functional houses should fit the requirements for the kind of bird that is desired and should be mounted in a manner that is safe for that kind of bird. Consult the Wild Birds Unlimited Housing Guide (available at Wild Birds Unlimited stores) for more information.
