Spring Allergies

If you’re uncertain you have spring allergies, look no farther than your nose. When your beak is irritated by allergens from pollen or mold spores, it lets forth with a fairly constant flow of clear and thin mucous. This is known as allergic rhinitis or "hay fever." A good way to tell allergic rhinitis from the common cold is by how long the sniffles last. While a cold typically hangs around for a week to 10 days, allergic rhinitis can stretch on for weeks or even months. What's worse, many people have additional symptoms that have one thing in common—they impact a person's quality of life. These include:

  • Frequent sneezing
  • Runny or stuffy nose
  • Temporary loss of smell due to the constant runny nose
  • Postnasal drip with coughing
  • Itchy nose and throat
  • Itchy, runny and burning eyes
  • Allergic conjunctivitis (inflammation along the lids causing redness and even crusting)
  • Dark circles under the eyes caused by increased blood flow to the sinuses; this is referred to as allergic shiners.

Additionally, some people with allergies develop asthma, which may cause coughing, wheezing and shortness of breath.

Avoidance of allergy triggers as well as preventive measures will help to decrease those annoying symptoms.

Some suggestions:

  • Trying to minimize outdoor activity between 5 a.m to 10 a.m., as well as on dry and windy days. During these times pollen levels are at their peak.
  • Shower and wash your hair every night. This will help rinse off the pollen and mold spores it collected during the day.
  • Place pillows and mattresses in washable covers.
  • Clean bed linen often.
  • Drying your clothes indoors and not on an outdoors clothesline. This way, pollen and mold spores aren't blown onto them.
  • Keep home and car windows closed and use an air conditioner. Change the filters often.
  • Use a vacuum with a high-efficiency particulate air (or HEPA) filter.
  • Bathe outdoor pets often in order to minimize the amount of pollen and mold spores they spread around the house.
  • Wear a filter mask while gardening or mowing the lawn.
  • Stay indoors if possible on high pollen-count days. To keep track of this number, check out the Web site of the National Allergy Bureau.

If avoidance and preventive measures don't help, there is still hope. Speak with your primary care physician or allergy specialist. Fortunately, we have a wide array of medications that can decrease your allergy symptoms and increase your enjoyment of the changing seasons.

My sister had been working extra hours, and the back seat of her car was filled with things she had not found time to take care of. There were clothes to be dropped off at the dry cleaner's, beverage bottles and newspapers to be recycled, mail, an extra pair of shoes and a bag of groceries.

A co-worker who had asked for a ride took a startled look at the back seat. "How long have you been living here?" she asked.

Cookies, Baking Sheets and Pans

Baking Sheets and Pans

  • Shiny heavy-gauge aluminum baking sheets are good heat conductors and will produce the most evenly baked and browned cookies.
  • Dark sheets absorb more oven heat and can cause cookies to overbrown or burn. Lining dark sheets with heavy-duty aluminum foil alleviates the problem.
  • Insulated baking sheets are made of two sheets of aluminum with an air pocket sealed between them. Cookies may take 1 to 2 minutes longer to bake on insulated sheets.
  • If all you have are thin, lightweight baking sheets, place one on top of the other to prevent cookies from burning.
  • Use this double-panning technique if you’re baking cookies in the lower third of your oven. The same goes for bar cookies—place one pan inside another to protect cookies from the bottom heat.
  • In a pinch, invert a jelly-roll pan and use the bottom as a cookie sheet.
  • Always use the pan size called for in a bar-cookie recipe. A smaller pan and the cookies will be too thick and gummy in the middle. A larger pan will produce thin, dry cookies.
  • If using a glass pan instead of one made of metal for bar cookies, reduce the oven temperature by 25 degrees F.

Preparing the Pans

  • Speed cleanup by lining baking sheets with parchment paper, which you don’t have to grease. Cookie bottoms won’t burn on parchment-lined sheets and you can slip the baked cookies on the parchment right off the baking sheet, onto a rack to cool. You can use greased foil the same way.
  • Grease baking sheets and pans with shortening, cooking spray or unsalted butter or margarine. Salted butter or margarine can cause cookies to stick and overbrown on the bottom. Too much grease of any kind can cause cookies to spread and their bottoms to burn.
  • Greasing baking sheets is typically unnecessary for high-fat cookies like shortbread.
  • To flour greased baking sheets or pans, sprinkle the surface with about 1/2 tablespoon flour; tap and rotate the sheet until the entire surface is coated with flour. Invert sheet over the sink and shake it gently to remove excess flour.
  • For bar cookies
    Line the pan (usually 8 x 8 inch or 9 x 13 inches) with foil or parchment paper, leaving at least 3 inches of overhang on each end. For easy foil lining, turn the pan upside down and form the foil to fit, tightly creasing the corners. Lift off the foil, flip the pan over and insert the formed foil into it. If the recipe calls for a greased pan, grease the foil (parchment doesn’t require greasing). Once the cookies are baked and cooled, use the overhang to lift the cookie slab out of the pan, then cut into bars or squares.

RECIPES

The Ultimate Stuffed Mushrooms

20 medium mushrooms
3 Tbsp. butter
2 Tbsp. finely chopped onions
2 Tbsp. finely chopped red pepper
14 Ritz Crackers, finely crushed (about 1/2 cup crumbs)
2 Tbsp. grated parmesan cheese
1/2 tsp.Watkins Italian Seasoning

Preheat oven to 400°F. Remove stems from mushrooms. Finely chop enough of the stems to measure 1/4 cup; set aside. Cover and refrigerate remaining stems for other use.

Melt butter in large skillet on medium heat. Add 1/4 cup chopped mushroom stems, the onions and peppers; cook and stir until vegetables are tender. Stir in cracker crumbs, cheese and Italian seasoning. Spoon crumb mixture evenly into mushroom caps. Place on ungreased baking sheet.

Bake 15 minutes or until heated through.

Substitute
Prepare as directed, using Ritz Reduced Fat Crackers and reduced fat parmesan style grated topping.

Make-Ahead
Mushrooms can be stuffed several hours in advance. Cover and refrigerate until ready to serve. Uncover and bake at 400°F for 20 min. or until heated through.

Plum-Glazed Cornish Hens

4 large navel oranges, sliced
4 Cornish game hens (1 to 1-1/2 pounds each), split lengthwise
1/4 teaspoon Watkins Granulated Pepper
1 can (16 ounces) plums, drained and pitted
1/4 cup finely chopped onion
1/4 cup butter or margarine
3/4 cup lemonade concentrate
1/3 cup chili sauce
1/4 cup soy sauce
1-1/2 teaspoons prepared mustard
1 teaspoon Watkins Ground Ginger
1 teaspoon Worcestershire sauce

Arrange orange slices in two greased 13-in. x 9-in. x 2-in. baking dishes. Top with game hens; sprinkle with pepper. Bake, uncovered, at 350° for 45 minutes.

Meanwhile, place the plums in a food processor or blender; cover and process until smooth. Set aside. In a large skillet, saute onion in butter until tender; stir in lemonade concentrate, chili sauce, soy sauce, mustard, ginger, Worcestershire sauce and plums. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally.

Set 1 cup of sauce aside. Brush remaining sauce over hens; bake 30-45 minutes longer or until juices run clear and a meat thermometer reads 180°, basting occasionally with pan drippings.

Serve with reserved plum sauce. Yield: 4-6 servings.

Asparagus Salad Supreme

2 pounds fresh asparagus, trimmed
1/2 pound fresh mushrooms, sliced
4 green onions, thinly sliced
1/2 cup chopped walnuts
1/4 cup butter or margarine
1/2 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon salt
1/8 teaspoon Watkins Ground Nutmeg
Additional walnuts, optional

In a skillet, cook asparagus in a small amount of water until crisp-tender, about 6-8 minutes; drain. Cover and refrigerate for at least 1 hour. In the same skillet, saute mushrooms, onions and walnuts in butter until mushrooms are tender. In a bowl, combine the mayonnaise, sour cream, salt and nutmeg. Stir in mushroom mixture. Cover and refrigerate for at least 1 hour. Just before serving, place asparagus on a serving platter; top with dressing and walnuts if desired. Yield: 6 servings.

Asparagus Spring Rolls

1 8-ounce package reduced-fat cream cheese (Neufchatel)
2 tablespoons snipped chives
2 tablespoons milk
1 to 2 tablespoons snipped fresh dill or 2 teaspoons Watkins Dill
1 clove garlic, minced
1 tablespoon lemon juice
1/2 teaspoon Watkins Granulated Pepper
1 tablespoon olive oil
1/4 teaspoon salt
8 dried lasagna noodles
24 asparagus spears
6 ounces thinly sliced smoked salmon
8 long fresh chives

  1. In a small mixing bowl combine cream cheese, snipped chives, milk, dill, garlic, lemon juice, and pepper; set aside.
  2. In a large pot bring 3 quarts water and the olive oil to boiling; add salt and lasagna noodles. Cook noodles for 10 to 12 minutes or until pasta is nearly tender.
  3. Meanwhile, snap off and discard woody bases of asparagus. If necessary, trim asparagus to 5-inch lengths. Add asparagus to pasta; cook 3 minutes more. Drain; rinse with cold water. Drain again and pat pasta dry with paper towels.
  4. Spread about 2 tablespoons of the cream cheese mixture evenly over each lasagna noodle. Divide salmon evenly among the noodles, placing a single layer of salmon on each noodle. Place 3 asparagus spears on one end of each noodle, letting the tips extend beyond the edge. Roll up each noodle. Tie with a fresh chive. Stand spring rolls upright to serve, if desired. Makes 8 side-dish servings.

Steamed Artichokes with Lemon Sauce

6 medium fresh artichokes
1-1/2 cups mayonnaise
4-1/2 teaspoons lemon juice
3/4 teaspoon Watkins Seasoned Salt
3 drops hot pepper sauce

Place the artichokes upside down in a steamer basket; place the basket in a saucepan over 1 inch of boiling water. Cover and steam for 25-35 minutes or until tender.

In a small bowl, combine the mayonnaise, lemon juice, salt and hot pepper sauce. Cover and refrigerate until serving with the steamed artichokes. Yield: 6 servings.

Raspberry Angel Cake
Not only is this a refreshing dessert, bit it's virtually fat-free.

1 package (16 ounces) angel food cake mix
1/2 teaspoon Watkins Almond Extract
1/2 teaspoon Watkins Vanilla Extract
1 package (3 ounce) regular or sugar-free raspberry gelatin
1 package (12 ounces) frozen unsweeteened raspberries, thawed or 1 1/2 cups of fresh raspberries
1 tablespoon sugar

Prepare cake batter according to package directions. fold in extracts. Spoon two-thirds of the batter into an ungreased 10-inch tube pan. add gelatin powder to remaining batter; drop by tablespoons over batter in pan. Cut through with knife to swirl.

Bake according to package directions. Immediately invert pan onto a wire rack or glass soda bottle. Cool completely, about 1 hour. Carefully run knife around sides of pan to remove cake. Cut into slices. Combine raspberries and sugar. If using fresh raspberries, mix ahead of time to allow raspberries and sugar to a form syrup. Serve over cake. Top with a dollop of reduced-fat whipped topping.

Live Eagles's Nest Web Cam

The eagle eggs have hatched!
An eagle pair in Maine tend to their nest and newly hatched young eagles! You can get an intimate view into their massive nest with the live web camera. The nest is 6 feet wide and 15 feet high, about 30 feet up near the top of a white pine tree that overlooks the Atlantic Ocean. The eggs were laid on March 6. Bald eagles normally incubate their eggs for about 35 days. The eggs hatched on April 10. I haven't had a peek at the baby eagles yet but their heads should be poking out of the nest soon.
