J.R. Watkins Lemon Furniture Polish

Cleaning your hardwood floors doesn't have to be a chore, simply wrap a micro fiber cloth around the bottom of your dry mop and spray J.R. Watkins Lemon Furniture Polish on your wood floor. Start mopping working about three feet in front of you, spray more polish as needed. How simple!

After creaming together butter and sugar, the next ingredient in many cookie recipes is eggs. Break each egg into a cup or small bowl before adding to butter and sugar. Eggs should be added one at a time, each one thoroughly beaten in before the next is added, to allow the creamed butter/sugar mixture to most effectively retain its trapped air. Be sure to scrape the sides of the bowl so all of the butter/sugar mixture is incorporated.

After adding the egg, the mixture in the bowl will look curdled and shiny. Keep mixing, and the mixture will smooth out.

Blueberry Peach Fool For April Fool's Day
"Fool" is a classic British dessert that's usually made with custard and cooked fruit. Why not usher in April with this delightfully creamy whipped dessert?

1-1/2 cups chopped peeled fresh peaches or frozen unsweetened sliced peaches, thawed and chopped
1/4 cup sugar
1/4 cup unsweetened apple juice
1/2 teaspoon Watkins Ground Cinnamon
Dash salt
1 cup heavy whipping cream
1/4 teaspoon Watkins Vanilla Extract
1-1/2 cups fresh or frozen blueberries, thawed

In a small saucepan, combine the peaches, sugar, apple juice, cinnamon and salt. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until peaches are tender. Cool slightly.

In a blender, process peach mixture until smooth. Transfer to a small bowl; cover and refrigerate until chilled. Just before serving, whip cream until it begins to thicken. Add vanilla; beat until soft peaks form. Fold into peach mixture. In parfait glasses, alternately layer blueberries and cream mixture. Yield: 2 servings.

Asparagus and Cheese Frittata
Frittatas are very versatile. Tailor the cheese and vegetables to your family's taste. You can also add pieces of ham or cooked bacon.

Watkins Cooking Spray or 1 tablespoon oil or butter
8 ounces fresh mushrooms, sliced
1 cup chopped onion
1 pound fresh asparagus, cleaned, tough ends removed, and cut into pieces
8 large eggs
1 tablespoon Watkins Pizza Seasoning or a mixture of Watkins Basil, Watkins Oregano, Watkins Garlic Flakes, and salt
1 cup shredded cheddar cheese
1/2 cup shredded Swiss cheese

1. Preheat the oven to 400 degrees F.
2. Heat an ovenproof skillet over medium-high heat. (Because frittata is finished in the oven or under a broiler, be sure your skillet is ovenproof.) When the oil is hot, add the mushrooms and onions and saute until the onions are browned, and the mushrooms have given up most of their liquid.
3. Add the asparagus and saute for just a few minutes, until it's becoming tender, but is still bright green. Remove from the heat and set aside.
4. Clean the pan, and grease it lightly.
5. Beat together the eggs, Pizza Seasoning or spice mixture, and 1 cup cheese.
6. Heat the greased skillet until hot. Pour in the egg mixture, add the sauteed vegetables and cook for several minutes, stirring from the edges and bottom of the pan.
7. When the mixture starts to thicken, sprinkle with the Swiss cheese; the frittata should be starting to set around the edges.
8. Place the pan in the oven, and bake for 12 to 15 minutes, until the eggs are set through, the cheese is lightly browned, and it's puffy. Remove from the oven, let rest for 5 minutes, then cut into wedges to serve. Yield: 6 servings.

Cinnamon Streusel Coffee Cake
This golden breakfast coffee cake is tender and moist, with a middle layer of cinnamon filling and a crumbly streusel topping.

Streusel Topping
1 1/4 cups granulated sugar
1/4 teaspoon salt (if you use unsalted butter)
1 1/2 cups all-purpose flour
1 tablespoon Watkins Ground Cinnamon
6 tablespoons butter, melted

Filling
1 cup brown sugar, light or dark
1 1/2 tablespoons Watkins Ground Cinnamon
1 teaspoon Watkins Baking Cocoa

Cake
3/4 cup butter
1 teaspoon salt (1 1/4 teaspoons if you use unsalted butter)
1 1/2 cups granulated sugar
1/3 cup brown sugar
2 1/2 teaspoons Watkins Baking Powder
2 teaspoons Watkins Vanilla Extract
3 large eggs
3/4 cup sour cream or plain yogurt
1 1/4 cups milk
3 3/4 cups all-purpose flour

1. Preheat the oven to 350 degrees F. Lightly grease a 9 x 13 inch pan, or two 9 inch round cake pans.
2. Make the topping by whisking together the sugar, salt, flour, and cinnamon. Add the melted butter, stirring till well combined. Set the topping aside.
3. Make the filling by mixing together the brown sugar, cinnamon, and cocoa powder. Set aside.
4. To make the cake: In a large bowl, beat together the butter, salt, sugars, baking powder, and vanilla until well combined and smooth.
5. Add the eggs one at a time, beating well after each addition.
6. In a separate bowl, whisk together the sour cream or yogurt and milk till well combined. You don't need to whisk out all the lumps.
7. Add the flour to the butter mixture alternately with the milk/sour cream mixture, beating gently to combine.
8. Pour/spread half the batter (a scant 3 cups) into the prepared pan(s), spreading all the way to the edges. If you're using two 9 inch round pans, spread 1 1/3 cups batter in each pan.
9. Sprinkle the filling evenly atop the batter.
10. Spread the remaining batter atop the filling. Use a table knife to gently swirl the filling into the batter, as though you were making a marble cake. Don't combine filling and batter thoroughly; just swirl the filling through the batter.
11. Sprinkle the topping over the batter in the pan.
12. Bake the cake until it's a dark golden brown around the edges; medium-golden with no light patches showing on top, and a toothpick or cake tester inserted into the center comes out clean, about 55 to 60 minutes for the 9 x 13 inch pan, 50 to 55 minutes for the 9 inch round pans. When pressed gently in the middle, the cake should spring back.
13. Remove the cake from the oven and allow it to cool for 20 minutes before cutting and serving. Serve cake right from the pan. Makes 24 servings.

I made this coffecake last week. There is way too much streusel topping. I recommend that the ingredients for the streusel topping be halved. Otherwise, you will be in for a sugar high. I also had to bake the coffeecake 10 minutes longer than stated in the recipe. This may be due to oven temperature variations.

Rhubarb Strawberry Dessert
This cobbler is a mixture of rhubarb, strawberries, sugar and thickener, baked under a batter that's somewhere between a cobbler and a crisp. A sprinkling of sparkling sugar brings just the right amount of crunch and shine to the top. This dessert is perfect served warm, with a scoop of ice cream or a dollop of whipped cream on top.

Fruit
4 cups diced rhubarb
1 quart strawberries, washed and sliced, or thawed if frozen
1 cup sugar
3 tablespoons quick-cooking tapioca or cornstarch

Topping 2 cups all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon Watkins Baking Powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted and cooled
1/4 cup milk
1 large egg
1 teaspoon Watkins Vanilla Extract
Sparkling sugar for garnish

1. For the fruit: Preheat the oven to 350 degrees F. Butter a shallow 3-quart baking dish. Spread the rhubarb in the dish.
2. Pour the sugar and tapioca or cornstarch over the strawberries; stir well and let the mixture sit for at least 15 minutes, so the juice from the berries softens the tapioca. Then pour the berries and sugar over the rhubarb in the baking dish.
3. For the topping: Whisk together the flour, sugar, baking powder and salt.
4. Add the milk, egg, and vanilla to the melted butter; whisk the mixture together and pour into the dry ingredients.
5. Stir the batter together until it's evenly moistened.
6. Spread the batter over the fruit in the pan leaving spaces so that the fruit is visible, and sprinkle it with sparkling sugar.
7. Bake for 40 to 45 minutes, until the fruit bubbles at the edges and the top is golden brown. Remove from the oven and serve warm. Makes 9 servings.
