My favorite vegetable is brocolli. I love to steam it, serve it with cheez whiz heated on top of it and also use it in many recipes including my Brocolli/Rice Casserole. Here's my recipe:
1 10 oz bag of frozen or fresh brocolli steamed until done. Set aside.
1 large onion sauteed in margarine until clear. Drain and set aside.
1 can of Mushroom soup do not add water
1 jar cheez whiz
1 can mushrooms drained
3 cups of minute brown rice cooked and drained.
Place all ingredients into a bowl and mix thoroughly. Pour into a casserole with lid. Heat in 375 degree oven until hot and bubbly. Serve immediately.

COOKING TIP
Salted and Unsalted Butter are the same quality butter. The only difference is that one has salt added and one does not. When you see a specific butter listed in a recipe, it is because that is the product the recipe was tested with. They can be used interchangeably in any recipe without adjusting the salt in the recipe.
Unsalted butter gives recipes a uniquely delicate, cultured flavor (and, it is not necessary to add more salt to the recipe). When you are baking recipes where sweet cream is the main flavor - such as butter cookies and pound cakes – the sweet delicate flavor of unsalted butter will really come through.

Pasta Tips
One type of pasta can be substituted for another in most recipes, but there are a few things to keep in mind when doing so. You always want to use pasta that is similar in shape and size to the type of pasta you want to replace. This will help you keep the type of pasta and the type of sauce consistent.
The type of sauce should act as guide as to what type of pasta to choose. For example thin flat pastas are best matched with thin sauces, where as smaller shapely pastas have nooks and crannies, which help to catch pieces of chunkier sauces.

RECIPES
Chicken With Asparagus and Mushrooms
2 tablespoons Watkins Grapeseed Oil
4 boneless, skinless chicken breast halves
1/4 teaspoon Watkins Pepper
1/4 cup chopped shallots or green onions
1 cup chicken broth prepared from 1 cup boiling water and 1 1/2 teaspoons Watkins Chicken Soup Base
12 ounces fresh asparagus spears or one 10-ounce package frozen asparagus spears
2 cups fresh mushrooms (about 4 ounces)
3 tablespoons balsamic vinegar
2 tablespoons margarine or butter, softened
2 tablespoons toasted pine nuts
Hot cooked rice
In a large, heavy skillet heat oil over medium-high heat. Add chicken and cook for 2 minutes. Turn chicken over in skillet and sprinkle with pepper. Add shallots or green onions to skillet; cook for 2 minutes more. Drain off fat. Add chicken broth. Bring to boiling; reduce heat. Cover and simmer for 5 minutes.
Meanwhile, snap off and discard woody bases from fresh asparagus. Cut asparagus into 2-inch lengths. Halve any large mushrooms. Add asparagus to skillet; cover and cook for 5-7 minutes, or till asparagus is just tender and chicken is tender and no pink remains. Add mushrooms. Cover and cook for 1 minute.
Use a slotted spoon to transfer chicken, asparagus, and mushrooms to a serving platter. Add vinegar to liquid in skillet. Bring to boiling; boil over high heat for 5 minutes, or till liquid is reduced to 1/3 cup. Remove skillet from heat. Using a wire whisk, blend margarine or butter into liquid in skillet. Spoon over chicken; sprinkle with pine nuts. Serve with rice.
Chicken with Sugar Snap Peas and Spring Herbs
1 cup chicken broth prepared from 1 cup boiling water and 1 1/2 teaspoons Watkins Chicken Soup Base
1 teaspoon Dijon mustard
1/2 teaspoon salt
Watkins freshly ground Pepper to taste
2 teaspoons plus 1 tablespoon flour, divided
1 pound thin-sliced chicken breast cutlets
1 tablespoon Watkins Grapeseed Oil
8 ounces sugar snap peas, cut in half (2 cups)
1 14-ounce can quartered artichoke hearts, rinsed
3 tablespoons minced fresh herbs, such as chives, tarragon or dill
2 teaspoons white-wine vinegar
Whisk broth, mustard, salt, pepper and 2 teaspoons flour in a small bowl until smooth.
Sprinkle both sides of the chicken with the remaining 1 tablespoon flour. Heat oil in a large nonstick skillet over medium-high heat. Cook the chicken in two batches, adjusting heat as necessary to prevent burning, until golden, about 2 minutes per side. Transfer the chicken to a plate; cover with foil to keep warm.
Increase heat to high; stir the broth mixture and add to the skillet along with snap peas and artichoke hearts. Bring to a simmer, stirring constantly. Reduce heat to maintain a gentle simmer and cook until the snap peas are tender-crisp, about 3 minutes.
Return the chicken to the pan, nestling it into the vegetables, and simmer until heated through, 1 to 2 minutes. Remove from heat; stir in herbs and vinegar.
Smothered Grilled Chicken Breast
4 boneless skinless chicken breast
1/2 lb of smoked bacon
2 tbsp Watkins Seasoning Salt
1 cup barbecue sauce made with Watkins Barbecue Sauce Concentrate
2 cups sliced mushrooms
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
4 slices mozzarella cheese
4 slices American cheese
Sprinkle chicken breast with seasoning salt. Place on grill cook over medium heat until done. Cook bacon in large skillet. When bacon is done drain skillet, leaving about 1 tsp of bacon grease. Place skillet back on stove on low heat and saute mushrooms, onions and peppers for approx 15 minutes or until tender. Place cooked chicken breast on baking sheet. Cover each breast with barbecue sauce. Place 2-3 slices of cooked bacon on each chicken breast and cover with sauteed mushrooms, onions and pepper, a slice of mozarella cheese and a slice of American cheese. Place cookie sheet with chicken back on grill just long enough to melt cheese.
Cook the bacon first, and then cook your mushrooms, onions and peppers while the chicken breasts are grilling. As soon as chicken is cooked you are ready to put all the ingredients on top and then right back the grill.
Roasted Stuffed Vegetables
An elegant alternative to bowls of dip, serve miniature roasted vegetables stuffed with your favorite dip and toasted until warm. Veggies are loaded with nutrients, low in calories, and generally lower in carbohydrates as compared to crackers, toasts, and chips.
Vegetables
Baby zucchini and summer squash, halved lengthwise, slightly hollowed
Small tomatoes, halved, seeded
Baby eggplant, halved lengthwise, hollowed
Sweet peppers, stem end trimmed, seeded, cut in pieces
Small onions, boiled, halved, hollowed
Small cucumbers, halved lengthwise, slightly hollowed
To prepare vegetables preheat oven to 400 degrees F and spray a rimmed baking sheet with Watkins Nonstick Cooking Spray.
Place vegetables on baking sheet and roast until vegetables are softened and slightly browned, 10 to 15 minutes, depending on the size of the vegetables.
Remove baking sheet from oven and fill vegetables with dip. Choose one of Watkins Snack and Dip Mixes. My choices are Bacon and Cheddar, Crab, Cucumber and Dill, and Salsa and Sour Cream.
Return baking sheet to oven and roast for 5 minutes or until dip is bubbly and warm. Serve vegetables warm.
Carrot Cupcakes with Cream Cheese Icing
Iced cupcakes are delicious snacks or desserts. Unfrosted, these carrot-filled cupcakes are perfect for breakfast on the run or a lunch-box treat.
1 cup granulated sugar
1/3 cup vegetable oil
2 tablespoons orange juice
1 teaspoon Watkins Vanilla Extract
2 large eggs
1 teaspoon Watkins Baking Powder
1/2 teaspoon baking soda
1/2 teaspoon Watkins Ground Allspice
1/2 teaspoon salt
3/4 cup plus 2 tablespoons all-purpose flour (spooned and leveled)
1 1/2 cups shredded carrots
1/2 cup chopped walnuts
1/4 cup shredded coconut, plus more for garnish
8 ounces bar cream cheese, room temperature
3/4 cup confectioners' sugar
Preheat oven to 350 degrees F. Oil a standard 12-cup muffin tin or line with paper liners. In a bowl, combine sugar, vegetable oil, orange juice, 1/2 teaspoon vanilla extract, and eggs.
Stir in baking powder, baking soda, allspice, and salt. Add flour; mix. Stir in carrots, walnuts, and coconut.
Divide batter evenly among muffin cups. Bake until toothpick inserted in centers comes out clean, 25 minutes. Let cool completely before frosting.
Meanwhile, in a mixing bowl, combine cream cheese, confectioners' sugar, and remaining 1/2 teaspoon vanilla extract. Whisk until smooth.
Frost cupcakes, and garnish with shredded coconut.
Makes 12 cupcakes.
Old Fashioned Sugar Cookies
These pressed cookies with a sugary crust are just like grandma used to make.
2 cups butter
2 cups powdered sugar
1 cup sugar
2 eggs
1 tsp. Watkins Vanilla Extract
2 tsp. lemon zest
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt
4 1/2 cups flour
1/2 cup sugar
Melt butter and add to sugars and mix. Let cool to room temperature and beat in egg one at a time. Then add vanilla, lemon zest, baking soda, cream of tartar and salt, mix well. Chill dough for at least one hour or over night. Preheat oven to 325 degrees F and place rack in middle of oven. Grease cookie sheet. Roll dough into walnut-sized balls, roll in sugar. Place balls on cookie sheet and flatten balls with greased glass. Bake for 10 to 15 mininutes. Cool slightly on cookie sheet, then remove to wire rack.
Lemon Truffle Pie
1/2 cup sugar
2 1/2 plus 1/2 cups water
1/2 cup Watkins Lemon Dessert Mix
2 egg yolks, beaten
1 cup white vanilla baking chips or chopped white chocolate baking bar (6 oz)
1 package (8 oz) 1/3-less-fat cream cheese, softened
Topping
1/2 cup whipping cream
1 tablespoon sliced almonds, toasted
- Heat oven to 450 degrees F. Bake packaged or homemade pie crust 9-inch glass pie plate. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes.
- In 2-quart saucepan, mix sugar, Lemon Dessert Mix, and 1/2 cup water. Mix well. Stir in 2 1/2 cups water and beaten egg yolks. Cook, stirring constantly, over medium heat until mixture boils and begins to thicken.
- Remove from heat. Place 1/3 cup hot filling in 1-quart saucepan; cool remaining lemon mixture 15 minutes. Stir vanilla chips into hot filling in 1-quart saucepan; cook and stir over low heat just until chips are melted.
- In small bowl with electric mixer, beat cream cheese on medium speed until fluffy. Beat in melted vanilla chip mixture until well blended. Spread in bottom of cooled baked shell. Spoon lemon mixture evenly over cream cheese layer. Refrigerate until set, 2 to 3 hours.
- In another small bowl with electric mixer, beat whipping cream on high speed until stiff peaks form. Pipe or spoon whipped cream over pie. Garnish with toasted almonds. Store in refrigerator.

BIRD WATCHING
Nesting Birds and Courtship Behavior
As birds are searching for and creating nests, displays of courtship can be fascinating to watch.
Courtship feeding is done by most species of birds, usually with the male presenting solid food or regurgitated food to the female. It appears to be not only a pair-bonding function but can actually provide the female with nutritional benefits. Females become heavier just before laying their eggs and it takes more energy for them to find food, so the male providing food helps to maintain the female’s health during the reproductive time.
It is also fun to watch what kind of materials birds may use in their nests. You can provide commercial nesting material, which is clean and colorful. Some birds have been known to pick material off clothes hanging on a clothesline.
It is helpful to provide calcium suet to nesting birds and to birds that are rearing their young. Calcium can be provided by offering suet with calcium or ground up egg shells. Be sure the egg shells have been completely dried before placing them out for the birds.
Providing shelter for the birds is important. Houses can help provide a place for birds to rear their young. If a brood has been successfully reared in a location, the birds may return to that site again. If a cat or predator has disturbed the nest site, the birds will choose another location.
Birds are fascinating to watch. You can enjoy the courtship and rearing of the young birds if you are aware that it happens right in your own backyard!
