Today is April 1st, April Fool's Day! I didn't include anything in this issue to fool you. I'm sending you wishes for a wonderful spring day with blooming flowers, chirping birds, and love and laughter.

JOB TITLE: Mother, Mom, Mama, Mommy
JOB DESCRIPTION:
Lifelong, team players needed, for challenging permanent work in an, often chaotic environment. Candidates must possess excellent communication and organizational skills and be willing to work variable hours, which will include evenings and weekends and frequent 24 hour shifts on call. Some overnight travel required, including trips to primitive camping sites on rainy weekends and endless sports tournaments in far away cities. (Travel expenses not reimbursed.) Extensive courier duties also required.
RESPONSIBILITIES:
Applicant must be willing to be hated, at least temporarily, until someone needs $5. Applicant must be willing to bite tongue repeatedly as well as possess the physical stamina of a pack mule. Additional responsibilities include: A willingness to face stimulating technical challenges, such as small gadget repair, mysteriously sluggish toilets and stuck zippers. An ability to screen phone calls, maintain calendars and coordinate production of multiple homework projects. An ability to plan and organize social gatherings for clients of all ages and mental outlooks. A willingness to be indispensable one minute, an embarrassment the next. Handling assembly and product safety testing of a half million cheap, plastic toys, and battery operated devices not essential but highly desirable. Applicant should always hope for the best but be prepared for the worst. It is also essential that applicant assume final and complete accountability for the quality of the end product.

Chocolate Boost
Coat the inside of a grahm cracker crust with a thin layer of melted chocolate. Allow to set; then add your favorite filling.

HEALTH TIP - Pineapple
The pineapple is a favorite tropical fruit that, when ripe, provides a sweet and tangy taste. An excellent source of manganese and vitamin C, fresh pineapple is also a good source of bromelain, a natural anti-inflammatory that is helpful for addressing the symptoms of sinusitis, gout, arthritis, and swelling and bruising. Eat it plain, in a smoothie or fruit salad, or use in relishes or to add sweetness to dishes such as pizza.

RECIPES
Velvety Chocolate Cream Pie
1 9-inch pie crust, baked and cooled
3/4 cup sugar
1/3 cup Watkins Cocoa
1/3 cup cornstarch
1/4 teaspoon salt
3 eggs, beaten
3 cups milk
3/4 cup semi-sweet chocolate chips
3 tablespoons butter
2 teaspoons Watkins Vanilla Extract
Whipped topping
Additional semi-sweet chocolate chips
- Prepare pie crust, cool.
- Stir together sugar, cocoa, cornstarch and salt in medium saucepan. Combine eggs and milk; gradually stir into sugar mixture, blending well. Cook over medium heat, stirring constantly with wire whisk, just until mixture comes to a boil. Remove from heat.
- Add chocolate chips, butter and vanilla. Stir until chips and butter are melted and the mixture is smooth. Pour into prepared crust. Immediately press plastic wrap onto pie surface. Refrigerate three to four hours or until firm. Garnish with whipped topping and chocolate chips. 8 servings.
Variation - Chocolate Coconut Cream Pie - Prepare pie as above; stir in 1 cup sweetened coconut flakes with chocolate chips and butter.
Coconut Marshmallow Nests
1/2 teaspoon water
3 to 4 drops green or other food color
1-1/4 cups sweetened coconut flakes
2/3 cup miniature marshmallows
1 tablespoon plus 1 teaspoon butter
Candy-Coated Milk Chocolate Eggs
- Combine water and food color in small bowl or small jar with cover or re-sealable plastic bag. Add coconut; toss with fork or shake closed jar or plastic bag until coconut is evenly coated.
- Microwave marshmallows and butter in medium microwave-safe bowl 30 seconds at HIGH (100%); stir. If necessary, microwave an additional 15 seconds at a time, stirring after each heating, until mixture is melted and smooth when stirred. Stir in tinted coconut.
- Line tray or cookie sheet with wax paper. Drop coconut mixture in 12 equal mounds onto prepared tray. Shape coconut mounds with moistened fingers into small nest shapes. Cool completely. Allow to air dry until slightly hardened. Fill with milk chocolate eggs.
Cherry Cheese Squares
1 1/4/ 325 ml all-purpose flour
1/2 cup/125 ml brown sugar
1/2 cup/125 ml vegetable shortening
1/2 tsp/2.5 ml Watkins Butter Extract (6 oz/180 ml on sale this month)
1/2 cup/125 ml flaked coconut
1/2 cup/125 ml finely chopped almonds
2 packages (8 oz/227 g each) cream cheese, softened
2/3 cup/160 ml sugar
2 eggs, beaten
2 tsp/10 ml Watkins Original Double-Strength Vanilla (6 oz/180 ml on sale this month)
1 or 2 cans (21 oz/595 g each) cherry pie filling
1/2 to 1 stp/205 to 5 ml) Watkins Almond Extract (6 oz/180 ml on sale this month)
1/2 cup/125 ml slivered almonds
Combine frour and brown sugar; cut in shortening and butter extract until fine crumbs form. Stir in coconut and finely chopped almonds. Reserve 1/2 cup/125 ml mixture for topping. Press remaining mixture into bottom of greased 9 x 13 inch/23 x 33 cm baking pan. Bake at 350 degrees F/180 degrees C for 12 to 15 minutes or until lightly browned.
Meanwhile, beat cream cheese, sugar, eggs, and vanilla in mixing bowl until smooth. Spread over hot crust. Bake an additional 15 minutes. Combine pie filling and almond extract and spread on top of cream cheese mixture. Combined reserved crumbs and slivered almonds; sprinkle over cherries. Bake 15 minutes more. Cool on wire rack. Refrigerate until serving time. Cut into squares.
Chicken Tortilla Soup
2 cups cooked chicken, cubed or shredded
6 cups water
3/4 cup Watkins Mexican Soup and Seasoning Base (on sale this month)
1 can diced tomatoes, undrained
1 can beans - kidney, pinto, black
1 can corn, drained
Tortilla chips
Bring water to a boil and add Mexican soup base. Reduce heat. Add diced tomatoes, beans, and corn.
Simmer for 15 minutes.
Ladle into bowls and top with crushed tortilla chips.
Tex-Mex Carnitas
3 tbsp/45 ml Watkins Salsa and Sour Cream Snack and Dip Seasoning (on sale this month)
1 cup/250 ml sour cream
1/3 cup/80 ml onion, chopped
3 tbsp/45 ml Watkins Garlic and Parsley Grapeseed Oil (on sale this month)
2 lbs/908 g pork, cut into small strips
1 cup/250 ml water
1tbsp/15 ml tomato paste
1/3 cup/80 ml Watkins Mexican Soup and Seasoning Base (on sale this month)
12 flour tortillas
Mix Snack and Dip Seasoning with sour cream and chill for 30 minutes to blend flavors.
In a large saucepan over medium heat cook the onions in oil until tender. Add pork and brown meat. Once the meat has browned add water, tomato paste, and seasoning mix and simmer for 1 to 1 1/2 hours. Stir occasionally. The meat will begin to shred as it becomes tender. Fill tortillas with meat and your favorite toppings and roll. Serve with salsa and sour cream mixture.
Spicy Mexican Dip
3 tbsp/45 ml Watkins Mexican Soup and Seasoning Base (on sale this month)
1 cup/250 ml sour cream
Add Mexican Seasoning to sour cream and chill 30 minutes to blend flavors. Serve with tortilla chips or vegetables.
Seasoning Mix for Tacos
1 lb/450 g ground beef or turkey
1/3 cup/80 ml Watkins Mexican Soup and Seasoning Base (on sale this month)
3/4 cup/180 ml water
Brown ground beef or turkey in a large skillet on medium heat. Drain fat. Stir in Mexican Soup Base and water. Bring to a boil. Reduce heat and simmer 5 minutes, stirring occasionally. Use for tacos, burritos, and enchiladas.

Where did all the birds go?
While it is impossible for us to know the cause of each local increase and decline, there are several common causes for bird population fluctuations.
- Habitat changes affect bird populations. If there has been a change in your neighborhood, such as trees being cut down or new houses being built, that could be the reason you are seeing a decrease in birds.
- Natural food supplies - such as cones, berries, seeds, and insects - fluctuate from year to year, causing birds to shift ranges to take advantage of food surpluses or to compensate for food shortages.
- Weather patterns often cause birds to shift ranges, especially in winter.
- Birds of prey sometimes move into an area causing the local birds to feed elsewhere until the predator moves on.
Bird populations normally fluctuate from one season to the next and from one year to the next. Sometimes, however, there are significant, long-term changes in the numbers of particular birds in certain areas.
