MOTIVATIONAL QUOTE

Look at a day when you are supremely satisfied at the end. It's not a day when you lounge around doing nothing, it's when you've had everything to do and you've done it!

The First of April

The first of April, some do say,
Is set apart for All Fools' Day.
But why the people call it so,
Nor I, nor they themselves do know.
But on this day are people sent
On purpose for pure merriment.
Poor Robin's Almanac, 1790

HEALTH TIP

Women Still Misinformed About Heart Disease

The classic sign of a heart attack isn't always a searing pain in the chest, usually lasting several minutes. And that's not necessarily the symptom felt by women, who make up 50 percent of America's heart attack victims.

Women more often than men experience shortness of breath, unusual fatigue, or the pressure is lower down in the chest so it is mistaken for a stomach ailment.

Heart disease is the No. 1 killer of both women and men, according to the National Institutes of Health. But women are less likely than men to believe they're having a heart attack and more likely to delay seeking emergency treatment.

A poll of 515 women who'd recently had a heart attack found that fewer than 30 percent complained of chest discomfort.

The most frequent acute symptoms were shortness of breath (58 percent), weakness (55 percent), and fatigue (43 percent). Women also complained of sleep disturbances, back pain, indigestion and anxiety, the survey found.

The typical time for a woman to have a heart attack is about 10 years after menopause, placing it around age 60.

To head off heart disease, post-menopausal women should undergo regular blood pressure and cholesterol checks. A man at risk of a heart attack should have his blood pressure checked once a year. But because women's heart attack risk increases so dramatically following menopause it is recommended that they have their blood pressure tested at least twice a year and their cholesterol tested at least once a year.

Women should pay attention to how they feel when exerting themselves. Six weeks before they have an actual heart attack, they will have exertion symptoms.

Regular aerobic exercise and a high-fiber, low-fat diet can be the two best ways to head off a heart attack. Diet and exercise are critical parts of prevention for women.

LAUGH FOR GOOD HEALTH

Working in a print shop, my co-worker and I sometimes forget how complex the equipment seems to clients. She explained to one woman how to use a copier that could enlarge, reduce, collate, change paper size and adjust the lightness or darkness of copies. "It's really so simple," my colleague concluded. "All you have to do is tell it what you want, and it does it." The client's anxiety vanished. Leaning close to the machine, she commanded, "Copy both sides, please!"

KITCHEN TIP

Cleaning Kitchen Sponges

Running sponges through the dishwasher with detergent gets rid of a lot of germs, but putting the sponge in the microwave for a minute will zap even more, since it gets much hotter. Whatever method you use, be sure to do it every other day. Studies indicate that sponges are the most contaminated object in the home and can harbor billions of bacteria, including staphylococcus or salmonella, both of which can cause food-poisoning symptoms such as vomiting and diarrhea. It's also wise to rinse sponges well and keep them out of the sink so they can dry out between uses. Drying kills a lot of germs. You should also change sponges frequently to avoid bacteria buildup; toss them after three weeks.

RECIPES

These yummy recipes are perfect for a spring or Easter brunch or dinner.

Orange Fruit Dip

1 pkg. (8 oz.) Cream Cheese, softened
1 jar (7 oz.) Marshmallow Creme
3 tablespoons Watkins Mandarin Orange Dip Mix

Mix ingredients until well blended; cover.
Refrigerate until ready to serve.
Serve with assorted cookies and fresh fruit.
Soften cream cheese by placing unwrapped in microwave for 10 to 15 seconds.

Breakfast Salad

1 unpeeled, chopped apple
1/2 cup/125 mL sunflower seed nuts
1/2 cup/125 mL raisins
1/4 cup/60 mL chopped dates
1 sliced banana
2 tbsp/30 mL honey
1 tbsp/15 mL fresh orange juice
1 tsp/5 mL Watkins Vanilla
1/2 tsp/2.5 mL Watkins Cinnamon
1 cup/250 mL nonfat cottage cheese
4 melon halves

Combine apples, sunflower seed nuts, raisins, dates, banana, honey, orange juice, vanilla and cinnamon; mix lightly to blend. Spoon cottage cheese into melon halves, top with fruit. Makes 4 servings.

Spring Asparagus Quiche

Watkins nonstick cooking spray
8 ounces asparagus spears, trimmed and halved crosswise
1/2 cup grated Parmesan cheese
2 teaspoons Watkins Dried Basil, crushed
1 10-ounce package refrigerated pizza dough
3 slices bacon
1 medium onion, chopped (1/2 cup)
5 beaten eggs
1/2 cup milk
1/8 teaspoon salt
Dash Watkins Ground Nutmeg
1-1/2 cups shredded Swiss cheese (6 ounces)
1 tablespoon all-purpose flour
2 teaspoons cooking oil
Shaved Parmesan cheese (optional)

  1. Preheat oven to 425 degrees F. Coat a 9-inch springform pan with nonstick cooking spray; set aside.
  2. In a medium saucepan cook the asparagus, covered, in a small amount of boiling water for 2 minutes. Drain; set aside.
  3. In a small bowl stir together the grated Parmesan and basil. Sprinkle a work surface with half of the mixture. Roll out pizza dough on the surface to a 12-inch square. Sprinkle with remaining Parmesan mixture. Using a rolling pin, gently press into dough by rolling over top.
  4. Turn dough into prepared pan. Press dough up the sides of the pan, folding under edges as needed to form sides that are 2 inches high. Line dough in pan with a double thickness of foil. Bake for 8 minutes. Remove foil. Bake 5 minutes more. Remove from oven. Reduce oven temperature to 350 degrees F.
  5. Meanwhile, in a small skillet cook bacon until crisp. Drain, reserving 1 tablespoon drippings. Crumble bacon; set aside. Cook onion in reserved drippings over medium heat until tender but not brown; drain.
  6. In a medium mixing bowl stir together eggs, milk, salt, and nutmeg. Stir in crumbled bacon and onion. Toss together Swiss cheese and flour. Add to egg mixture; mix well.
  7. Pour egg mixture into the dough-lined pan. Toss asparagus halves with the oil. Arrange asparagus in a spokeline pattern on top of egg mixture. Bake 35 to 40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before serving. Remove sides of pan to serve. Top with shaved Parmesan cheese, if desired. Makes 6 main-dish servings.

Ham with Apricots in Vanilla Sauce

2 center-cut ham slices, about 1/2 inch/12 mm thick
1-1/2 cups/375 mL dried apricots
1-1/3 cups/325 mL water
3 tbsp/45 mL sugar
1 tbsp/15 mL Watkins Vanilla
1/4 tsp/1.2 mL Watkins Nutmeg
1/8 tsp/0.6 mL Watkins Ground Cloves
2 tbsp/30 mL cornstarch
1/2 cup/125 mL water

Place ham slices in large glass baking dish. Bake, uncovered, at 350 F for 15 minutes. While ham is baking, combine apricots and next 5 ingredients in medium saucepan. Bring mixture to a boil, reduce heat and simmer 5 minutes. Combine cornstarch and water; stir into apricot mixture and cook until mixture begins to thicken. Drain excess liquid from ham. Spoon apricot mixture evenly over ham slices. Bake an additional 10 to 15 minutes or until heated through. Serve ham slices along with apricot topping on a serving platter. Makes 8 servings.

Or bake ham, slice, and serve with sauce.

Walnut Caramel Triangles

This unique walnut and caramel cookie bar is a pretty addition to a cookie collection that is fun to make and eat! Also great for an afternoon brunch or shower.

2 cups all-purpose flour
1/2 cup confectioners' sugar
1 cup cold butter or margarine
1 (14-ounce) can sweetened condensed milk (NOT evaporated milk)
1/2 cup whipping cream, unwhipped
1 teaspoon Watkins Vanilla Extract
1 1/2 cups chopped walnuts
Chocolate Drizzle

Preheat oven to 350°F. In medium bowl, combine flour and sugar; cut in butter until crumbly. Press firmly on bottom of 13x9-inch baking pan. Bake 15 minutes or until lightly browned around edges. In heavy saucepan, combine sweetened condensed milk, whipping cream and vanilla. Over medium-high heat, cook and stir until mixture comes to a boil. Reduce heat to medium; cook and stir until mixture thickens, 8 to 10 minutes. Stir in walnuts.

Spread evenly over prepared crust. Bake 20 minutes or until golden brown. Cool. Garnish with Chocolate Drizzle. Chill. Cut into triangles. Store leftovers covered at room temperature.

Chocolate Drizzle: Melt 1/2 cup semi-sweet chocolate chips with 1 teaspoon shortening. Carefully drizzle chocolate mix over the cookies with a spoon.

German Chocolate Cake

Lucious to eat, simple to make! Celebrate with the rich taste of chocolate cake topped with a creamy, pecan and coconut frosting.

1 (18.25 or 18.5-ounce) package german chocolate cake mix
1 cup water
3 eggs plus 1 egg yolk
1/2 cup vegetable oil
1 (14-ounce) can sweetened condensed milk (NOT evaporated milk), divided
3 tablespoons butter or margarine
1/3 cup chopped pecans
1/3 cup flaked coconut
1 teaspoon Watkins Vanilla Extract

Preheat oven to 350°F. In large bowl, combine cake mix, water, 3 eggs, oil and 1/3 cup sweetened condensed milk. Beat on low speed until moistened, then beat on high speed 2 minutes.

Pour into well-greased and floured 13x9-inch baking pan. Bake 40 to 45 minutes or until toothpick inserted near center comes out clean.

In small saucepan, combine remaining sweetened condensed milk, egg yolk and butter. Over low heat, cook and stir until thickened, about 6 minutes. Add pecans, coconut and vanilla; spread over warm cake. Store leftovers covered in refrigerator.
