As I mentioned in the last issue I bought a bread machine. I've made dinner rolls, cinnamon rolls, white bread,
and wheat bread. Some good, some not so good! If anyone with a bread machine has tips or
suggestions for making bread please share them with us.

HEALTH TIP
According to the American Diabetes Association, doctors estimate that nearly one-third of the American population has type 2 diabetes and doesn't know it.
That's because all but the most serious cases of diabetes may have symptoms that seem harmless — like thirst and fatigue. Today you can reduce your chances
of developing diabetes by learning how to identify risk factors and taking steps to avoid them.
People with type 2 diabetes have too much glucose in their blood and not enough insulin to break it down. Large concentrations of blood glucose can cause
irreparable damage to the kidneys, eyes, and nervous system. You should watch out for the following risk factors:
High blood pressure (above 130/80)
Obesity or being overweight
Increased age
Inactivity
Family history of diabetes
The most effective ways to avoid this dangerous disease are to maintain a healthy weight, participate in daily exercise, and eat a diet low in saturated fat and
rich in fresh fruits, vegetables, and whole grains.
To find out if you're at risk of developing diabetes, you can take a risk test on the web site of The American Diabetes Association.

Yogurt Cooking Tips
- Substitute plain yogurt for sour cream on a baked potato, or in stroganoffs and stews.
- To reduce the calories in dips and dressings, yogurt can be substituted for mayonnaise or sour
cream in equal amounts. For example, substituting lowfat yogurt for sour cream in baked goods
saves 46 grams of fat per cup.
- Yogurt can be used in place of heavy cream to thicken a variety of sauces. To keep it from curdling,
be sure to add some starch to the yogurt before adding to your sauce. The suggested ratio is 1
tablespoon of flour to 1 cup of yogurt.
- Yogurt helps to tenderize meats, and makes an excellent marinade, due to its high acidity.
- Yogurt is recommended for use in baked goods, as it helps to keep the food moist while improving
its texture.
- Heating yogurt to high temperatures destroys its beneficial bacteria that it contains. To preserve the
bacteria, never add yogurt to a boiling or extremely hot mixture. Instead, stir a few tablespoons of
the hot food into the yogurt, warming it gradually. Then stir the warmed yogurt back into the hot
mixture.
- Mixing yogurt in a blender can cause it to break down and become liquefied. Instead, be sure to
gently fold in yogurt when incorporating into most recipes.
- Avoid using aluminum products when preparing any recipes using yogurt. The acid in the yogurt will
react negatively with the aluminum.
- Mix Watkins Snack and Dip Mixes with yogurt instead of sour cream for a healthier dip.

Our healthy food for this issue is yogurt. What exactly is yogurt?
Yogurt is milk that has been inoculated with two live active cultures: Lactobacillus bulgaricus
(L. bulgaricus) and Streptococcus thermophilus (S. thermophilus). During incubation, these
cultures break down the milk sugar (lactose) and produce lactic acid, which gives the milk the
tangy taste we associate with yogurt. Yogurt is a highly nutritious food choice because it’s a
good source of calcium and protein, and it’s rich in vitamins and minerals that are necessary
for good health.
Studies have shown that probiotic live cultures benefit your health in a variety of ways:
- Enhance digestion
- Boost the immune system
- Absorb mutagens that cause cancer, particularly of the colon
- Fortify the body’s natural defenses and prevent common digestive ailments
- Decrease the presence of harmful bacteria, including those that cause food-borne illnesses like
E. Coli, Salmonella, Staphylococcus, Listeria and the yeast Candida
- Improve absorption of nutrients
Several studies indicate that L. acidophilus helps lower cholesterol by interfering with cholesterol
re-absorption in the intestine.
Recipes using yogurt
Strawberry Pancakes
Surprisingly light and fluffy, but very moist.
Delicious with maple syrup or just a dollop of vanilla yogurt.
1 cup unbleached all-purpose flour
1 1/2 cups whole wheat flour
1/4 cup oat bran
1/4 cup sugar
1/2 teaspoon salt
2 teaspoons Watkins Baking Powder
2 teaspoons baking soda
3 eggs
1/4 cup butter, melted
1 cup plain yogurt
1 cup milk
1 teaspoon Watkins Vanilla
2 cups chopped strawberries, fresh or frozen
In a large bowl, whisk together the flours, oat bran, sugar, salt, baking powder and baking soda.
In a separate bowl, beat the eggs. Add the melted butter, yogurt, vanilla, and milk. Stir to combine.
Pour the egg mixture into the flour mixture and stir until just blended. The batter will be thick.
Fold in strawberries. Spoon the batter onto a preheated, oiled griddle, using 1/4 cup batter for each
pancake. Cook pancakes slowly over a low-medium heat for approximately 4–6 minutes.
Yields 6 servings
Maple Granola
Makes a tasty cereal or snack.
7 1/2 cups rolled oats
1/2 cup dry soy milk powder
1 cup shredded coconut
2 cups toasted almonds or walnuts
1 2/3 cups sunflower seeds
1/2 cup sunflower oil
1 cup maple syrup
1 tablespoon Watkins Vanilla
Combine dry ingredients in large bowl, combine liquid ingredients in small bowl them combine and
place in large shallow baking pan and bake at 300° for 1 hour tossing every 15 minutes or so until
golden brown. Granola will crisp up as it cools. Store in a gallon jar; also freezes well. You can add
any dried fruit if you wish after baking.
Yields about 5 pounds
Vanilla French Toast
French Toast is an all-time favorite for kids and adults. By using lowfat yogurt instead
of sour cream you can get that same great taste, with far fewer calories!
6 slices cinnamon raisin bread
1/2 cup vanilla lowfat yogurt
1/4 cup lowfat milk
2 eggs
1/4 teaspoon Watkins Ground Cinnamon
1/4 teaspoon Watkins Ground Nutmeg
1 teaspoon Watkins Vanilla Extract
Salt to taste
Mix together eggs, yogurt, milk, salt, spices and vanilla extract. Heat a lightly
oiled griddle or skillet over medium-high flame. Dunk each slice of bread in egg mixture,
soaking both sides. Place in pan, and cook on both sides until golden. Serve hot and top with
yogurt or fresh berries.
Yields 3 servings

Blueberry Smoothie
1 pint fresh blueberries or 2 cups (10 ounces) frozen blueberries, slightly thawed
1 cup pineapple, orange and strawberry juice blend or pineapple-orange juice
1/2 teaspoon Watkins Vanilla or 1/4 teaspoon Watkins Orange Extract
1 container (8 ounces) lowfat vanilla yogurt
2 tsp sugar
In a container of an electric blender combine blueberries, juice,
yogurt, extract, and sugar. Blend until smooth, about 1 minute.
Servings: 1
Banana Mango Tango Smoothie
1 cup of nonfat, lowfat, or whole milk plain yogurt
1-1/2 cups lemonade
2 ripe bananas
1 ripe mango (peeled & cubed)
2 tablespoons Watkins Vanilla Extract
4-6 ice cubes
Combine yogurt, lemonade, fruit, extract, and ice in a blender. Blend. For additional mango flavor add 1/4
teaspoon Watkins Mango Extract.
For a delicious frosty treat, substitute the yogurt with 1 cup of vanilla ice cream or frozen yogurt
and omit the ice.
Yields 4-6 servings
Chocolate Banana Smoothie
This smoothie will become a favorite of all banana lovers!
2 bananas, frozen
1 cup strawberries, frozen
2 tablespoons chocolate syrup
1/4 teaspoon Watkins Chocolate Extract
1 cup plain yogurt
1/2 cup skim milk
Combine all ingredients in a blender, and puree until smooth.
Yields 2 glasses

Spiced Yogurt and Honey Dip
This dip is an excellent accompaniment to fresh fruit – try it with apples, melons, strawberries,
grapes, pineapple or any other fruit you desire!
1 cup lowfat vanilla yogurt
2 tablespoons honey
1/4 teaspoon Watkins Ground Ginger
1/8 teaspoon Watkins Ground Allspice
1/4 teaspoon Watkins Ground Cinnamon
1/8 teaspoon ground cardamom
1/4 teaspoon Watkins Orange Peel or fresh orange zest
Combine all ingredients in a bowl and mix thoroughly. Serve chilled along side your favorite fresh
fruits and melons.
Yields 1 cup

Warm Spinach and Artichoke Dip
1 tablespoon butter
2 tablespoons olive oil
1 3/4 cups chopped onion
2 large garlic cloves, minced
2 tablespoons all purpose flour
1/2 cup chicken broth, prepared from Watkins Soup Base
1 10-ounce package fresh spinach leaves
1 cup artichoke hearts, drained & chopped
1 cup grated Parmesan cheese
3/4 cup lowfat plain yogurt
1/2 teaspoon Watkins Cayenne Pepper
Baguette slices, toasted
Melt butter with oil in a large, heavy pot over medium heat. Add onion and garlic; sauté until onion
is tender, about 6 minutes. Add flour; stir 2 minutes. Gradually whisk in stock; bring to boil,
whisking constantly. Cook until mixture thickens, stirring frequently, about 2 minutes. Remove from
heat. Stir in spinach, artichoke hearts, cheese, yogurt and cayenne (spinach will wilt). Season with
salt and pepper. Transfer dip to serving bowl. Serve warm with toasted baguette slices.

Dill Yogurt Dip
1 cup plain low-fat yogurt
1/2 cup reduced-fat sour cream
2 tablespoons fresh lemon juice
2 tablespoons snipped fresh dill or 2 teaspoons Watkins Dill
1 1/2 teaspoons sugar
1/2 teaspoon Watkins Garlic Salt
1/4 teaspoon Watkins Black Pepper
Stir together all ingredients. Refrigerate for flavors to develop and chill until serving.
Serve with you favorite veggies.

Warm Chicken Salad
Juicy grilled chicken breasts, hot off the grill, and a creamy dressing come together in this
wonderful, warm salad. Serve with garlic bread.
1/4 cup Watkins Spicy Garlic Soy Sauce
1/4 cup packed brown sugar
2 teaspoons vegetable oil
1/2 clove garlic, minced or 1/4 teaspoon Watkind Garlic Granules
1 1/2 pounds skinless, boneless chicken breasts
8 cups mixed salad greens
1/2 cup shredded carrots
1/2 cup chopped green bell pepper
1/2 cup sliced green onions
1 cup mayonnaise
3/4 cup plain yogurt
Makes 6 servings
- Preheat grill or broiler. In a small bowl, combine soy sauce, brown sugar, oil and garlic.
Reserve 1/3 of marinade. Brush remaining marinade over chicken. Grill or broil the chicken,
basting with reserved marinade, until cooked through, about 10 minutes. Cut into strips. Keep
warm.
- Meanwhile, combine salad greens, carrots, bell pepper and green onions in a salad bowl;
toss lightly to mix. Combine mayonnaise and yogurt in a small bowl.
- Add warm chicken strips to salad and toss gently. Spoon dressing over salad and serve
immediately.
Fruit-and-Nut Chicken Salad
Feel free to adjust this crowd pleaser to your taste - try it with different nuts and chopped fruits.
Dressing
1/2 cup mayonnaise
1/4 cup sour cream or plain yogurt
1/4 cup olive oil
1/3 cup finely chopped fresh basil or parsley or 1 tablespoon Watkins Basil or Parsley
2 teaspoons grated lemon peel or 1 teaspoon Watkins Lemon Peel
2 tablespoons fresh lemon juice
1 1/2 teaspoons salt
1/2 teaspoon Watkins Black Pepper
Salad
1 cup pecan halves
6 cups cubed cooked chicken
4 large celery ribs, sliced
1 cup seedless red grapes
Serves 6–8 as a main dish
In a small bowl, whisk together all of the dressing ingredients until smooth.
Preheat the oven to 350F. Spread the pecans on a baking sheet; toast in the oven for 10 minutes,
until fragrant. Let cool.
In a large bowl, combine the chicken, dressing, pecans, celery and grapes and toss well. Let sit for
at least 5 minutes to allow the flavors to develop.
No-Fuss Salad Dressing
Mix up a week’s supply of this fabulous peppery dressing and keep it on hand for a quick tossed
salad.
1 cup plain nonfat yogurt
2 tablespoons buttermilk
2 tablespoons reduced-calorie mayonnaise
1 tablespoon prepared white horseradish
2 teaspoons Dijon-style mustard
1 tablespoon chopped fresh parsley or 1/4 teaspoon Watkins Parsley
1 teaspoon chopped fresh dill or 1/4 teaspoon Watkins Dried Dillweed
1/4 teaspoon Watkins Celery Seed
1/4 teaspoon Watkins Black Pepper
Makes 1 1/2 cups
In a medium bowl, combine yogurt, buttermilk, and mayonnaise. Mix well. Add horseradish,
mustard, parsley, dill, celery seed, and pepper. Mix well.
Place the dressing in a serving bowl and serve immediately. Or, to prepare dressing in advance,
cover the bowl with plastic wrap and store in the refrigerator for up to 4 days.
Alternatively, combine all dressing ingredients in a jar with a tight-fitting lid. Shake well to blend
before serving.
Curried Broccoli & Cauliflower Soup
Curry and nutmeg give just the right zing to this vegetable soup.
1 tablespoon olive oil
2 cloves garlic, chopped
1 cup yellow onion, diced
1 lb. broccoli florets
1 lb. cauliflower florets
1 1/2 teaspoon Watkins Curry Powder
5 cups vegetable broth
2 cups lowfat plain yogurt
1/8 teaspoon Watkins Ground Nutmeg
1 teaspoon salt
1 teaspoon Watkins Granualted Black Pepper
In a large soup pot, heat olive oil over medium-high heat and sauté garlic and onions until
translucent. Add broccoli and cauliflower florets and about 2 tablespoons of the vegetable broth
to generate steam. Place lid on pot, reduce heat to medium, and steam vegetables for about 5
minutes. Add curry powder and remaining broth. Simmer until vegetables are very tender, about
15 minutes.
Once cooked, ladle broth and vegetables into a blender and puree until smooth. Return to soup pot,
heat over medium heat, and gradually whisk the yogurt and seasonings into the soup. Once
combined, do not bring to a boil to prevent the yogurt from curdling. Serve warm.

Yogurt with Honey and Spices
This simple dish makes a delicious dessert.
1 32oz cup vanilla yogurt
1/2 teaspoon cardamom
1/2 teaspoon Watkins Ground Cinnamon
4 tablespoons honey
1/2 cup almonds, toasted & sliced
Place one cup of yogurt into a bowl, sprinkle with spices, top with almonds and a drizzle of honey.

Yogurt Marinated Chicken
Whether you are barbecuing a chicken breast or thigh, this marinade will add some great summer
flavor and ensure that your chicken is tender, moist and delicious!
1 cup yogurt
1/4 cup olive oil
2 tablespoons lemon juice
2 garlic cloves, chopped
1 tablespoon Watkins Rosemary
1 tablespoon Watkins Thyme
1 teaspoon salt
1 teaspoon Watkins Granualted Black Pepper
4 chicken breasts, skinless, boneless
Combine all ingredients in a bowl, add chicken breasts and allow to marinade for at least 2 hours.
Grill chicken on medium-high and serve with potato salad, grilled corn, or any other favorite summer
side dishes.

Grilled Chicken Wraps with Cilantro Yogurt Dressing
Chicken breasts and summer vegetables are some of the easiest things to grill.
The cilantro yogurt dressing is sure to keep you coming back for more!
4 chicken breasts (skinless and boneless)
1 red pepper
1 yellow pepper
1 red onion
3 zucchini, sliced
3 yellow squash, sliced
2 tablespoons olive oil
2 teaspoons Watkins Cumin
2 teaspoons Watkins Chili Powder
Salt and Watkins Black Pepper to taste
Whole wheat tortillas for wraps
Dressing
1 cup lowfat plain yogurt
2 garlic cloves
1 teaspoon Watkins Ground Cumin
1 teaspoon Watkins Chili Powder
1 teaspoon Watkins Black Pepper
1 bunch of cilantro
Juice of one lime
Salt to taste
Dressing
Place garlic and cilantro into a food processor and chop into semi-coarse pieces.
Add yogurt, lime juice, chili powder and black pepper and blend. Adjust taste by adding salt.
Chill and reserve.
Chicken and Vegetables
Season chicken breasts by rubbing with cumin, chili powder, salt, pepper and olive oil.
Marinade chicken breasts for 30-40 minutes. While chicken is marinating, slice the squash
lengthwise, slice onion into 1/4 inch rings, and toss squash, onions and whole peppers with olive oil.
Grill these items and then allow to cool. Peppers will take slightly longer, they should be grilled until
they are black. Once peppers are blackened, rinse away the charred skin, and then slice into strips.
Grill chicken next, and once done, allow to cool, slice into strips. To serve, place grilled vegetables
and chicken into a whole wheat tortilla, top with cilantro yogurt dressing, and then enjoy!

Mexican Casserole
A creamy twist to a spicy dish.
2 lbs ground beef
1 medium onion, chopped
1 green pepper, chopped
2 tablespoons minced garlic
8 oz mild taco sauce
10 oz mild enchilada sauce
2 cups plain yogurt
4 oz green chilies, diced
12 tostado (flat taco) shells or equivalent amount of tortilla chips
3 cups sharp cheddar cheese, grated
10 ounces mild salsa
2 teaspoons salt
2 teaspoons Watkins Black Pepper
Preheat oven to 350ºF. Brown meat, onion, green pepper and garlic. Drain off fat.
Season with salt and pepper. Add taco and enchilada sauce. Heat yogurt and chilies in a separate
saucepan. Add to meat mixture. Blend well. In a 9x12 casserole dish, line bottom with 6 layers
tostado shells, broken in quarters. Add half of meat mixture, cover with cheese. Top with salsa and
repeat shells, meat and cheese. Bake for 35 minutes.
Yields 8-10 servings
Yogurt Custard Pie
This quick and easy recipe is a great one to make with your children. With only a handful of
ingredients, and very little preparation, this is a pie that everyone is sure to enjoy.
2 eggs
1 cup plain lowfat yogurt
1/2 cup sugar
1 teaspoon Watkins Vanilla
1 cup peaches, sliced
1/2 cup cherries, pitted, chopped
1 - 9 inch pie crust
Preheat oven to 350°F. Beat eggs until well blended and whisk in yogurt and sugar.
Stir peaches and cherries (or any other of your favorite fruits) into the mixture and pour into pie
shell. Bake for 30 minutes, until the custard sets around the edge. The inner 2-3 inches should still
remain somewhat soft. Chill, slice and serve.

Strawberry Cheesecake Icebox Pie
This simple recipe is great for anyone that likes
to entertain but does not have the time
to bake up something for dessert. Plus, it's a
delicious way to cut calories.
1 cup plain fat free yogurt
1 8oz. package of fat free cream cheese
3 tablespoons sugar
1 teaspoon Watkins Vanilla Extract
1 cup strawberries, diced
1 9" graham cracker crust
In a medium-size mixing bowl, cream together cream cheese and sugar. Blend yogurt and
vanilla extract into this mixture. Fold in strawberries, and pour filling into graham cracker crust.
Freeze for 2-3 hours or until set. Top with whipped cream if you like, and allow pie to warm slightly
before serving.
Yields 8 Servings

Maple Spice Cake
2 cups flour
1 teaspoon baking soda
1 teaspoon Watkins Baking Powder
1/4 teaspoon salt

1/2 teaspoon Watkins Ground Cloves
1/2 teaspoon Watkins Ground Nutmeg
1/2 cup butter
2/3 cup brown sugar
1 cup maple syrup
1 cup plain yogurt
2 eggs
Preheat oven to 350°F. Combine all dry ingredients; flour, baking soda, baking powder, salt, and
spices, in a large mixing bowl, and combine well. In separate bowl, cream together butter and
brown sugar. Slowly pour in the maple syrup, followed by yogurt and then eggs. Sift dry ingredients
into the liquid mixture, until fully incorporated. Pour into a 9x13 baking pan and bake for 35-40
minutes. Once baked, allow cake to cool. Frost if desired.

Yogurt Herb Quick Bread
Very easy to make and a perfect companion for a luncheon salad or a hearty stew.
Or serve with cream cheese for breakfast, accompanied by fresh fruit or juice.
1 cup unbleached all-purpose flour
1 cup whole wheat flour
1 teaspoon Watkins Baking Powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, melted
2 large eggs, beaten
1 cup plain yogurt
1/2 cup honey
1 teaspoon Watkins Dried Dill
1/2 teaspoon Watkins Dried Oregano
1/2 teaspoon Watkins Dried Thyme
1/2 teaspoon Watkins Dried Basil
1/2 teaspoon Watkins Dried Tarragon
Preheat oven to 350°F. Shift the flours, baking powder, baking soda and salt together into a
large bowl. In another bowl, beat the cooled butter, eggs, yogurt and honey until frothy; add the
herbs and beat again. Make a well in the center of the dry ingredients; pour the liquid mixture into
the well and stir with a wooden spoon until thoroughly blended. Pour into a lightly greased 8x4-inch
bread pan and bake for 40 - 50 minutes.
Yields 1 loaf
Oven-Fried Chicken
2 to 2-1/2 pounds meaty chicken pieces (breasts, thighs, and drumsticks), skinned
1/4 cup cornflake crumbs
1 tablespoon snipped fresh parsley
1/3 cup plain low-fat yogurt
1 clove garlic, minced
2 teaspoons Watkins Spicy Garlic Soy Sauce or Watkins Hot Honey Soy Sauce
1/4 teaspoon Watkins Red Pepper Flakes
Place chicken on a rack in a shallow baking pan; set aside.
In a small mixing bowl combine cornflake crumbs and parsley; set aside. In another small mixing
bowl combine yogurt, garlic, soy sauce, and pepper.
Brush chicken with yogurt mixture, then sprinkle with crumb mixture. Bake, uncovered, in a 375
degrees F oven for 45 to 55 minutes or until chicken is tender and no longer pink and an instant
read thermometer registers 180 degrees F.
Makes 6 servings.

Attract Birds Like Magic With This Irresistible Treat!
If you would like to attract birds to your backyard mix up this homemade treat, perfect for any
season of the year.
Homemade Bird Treat
Mix together:
1 part peanut butter
1 part vegetable shortening
1 part finely cracked corn
1 part white or whole wheat flour
1 part mixed bird seed
3 parts yellow cornmeal
I used a half cup measuring cup for each one part of ingredient.
The finely cracked corn can be found at your local birding store.
Place this mixture in your suet feeder, smear on a tree trunk, or
stuff into pine cones. You can also put mix in a mesh onion sack.
Jays, titmice, juncos, nuthatches, and other feathered friends will appear
like magic.
